How to choose good quality brown rice
- You should choose brown rice that is dark red or black instead of yellow-brown, as the dark red or black brown rice contains more nutrients.
- Choose long, slender grains that are not broken and not infested.
- In particular, when touching the brown rice, you will feel its smoothness and the shiny husk due to the oil coating outside; you should choose this type as it is still fresh and contains many nutrients.
- Avoid selecting grains that appear opaque and dull, as these have been stored for a long time and have lost quite a lot of nutrients.

How to prepare Brown Rice with Sesame Salt

Prepare the brown rice
Remove any debris, damaged, bad grains, or weevils from the brown rice, you can use a sieve to filter them out.

Cook rice with brown rice
Add 200g of brown rice to the pot, rinse the rice briefly with cold water. Soak the rice in cold water for 2 hours.
After soaking the rice, pour 400ml of water into the pot and cook the rice.

Prepare the peanuts
Carefully remove the hard outer shell of 300g of peanuts, discarding any spoiled or blemished ones. Then rinse thoroughly with water and drain.
Heat a pan on the stove, wait for it to get hot, adjust to high heat, add all the peeled peanuts and stir evenly to dry the peanuts. Once the peanuts turn slightly brown and emit a fragrant aroma, reduce the heat and continue roasting until the peanut’s skin begins to crack. After that, remove them to a bowl to cool.
Once the peanuts are cool, use your hands to squeeze and remove the peanut skins.
Tip: To keep the peanuts crispy for a long time after roasting, place them in a dish towel and let them rest for 30 minutes to 1 hour.To wash the sesame seeds, pour them into about 500ml of clean water. Then, use a sieve to retain the sesame seeds and drain.
Heat a pan on the stove, wait for it to get hot, and add all the sesame seeds. Similar to the peanuts, adjust to high heat to dry the sesame seeds and stir continuously. Once the sesame seeds are dry, gradually turn golden brown and emit a fragrant aroma, they are done. Turn off the heat and transfer to a small bowl.
Continue by heating a pan on the stove, add 100g of coarse salt, and stir until the salt gradually turns opaque white. Turn off the heat and transfer to a bowl.

Put the peanuts in a mortar and grind them finely. Then, transfer them to a plate. Do the same with the sesame and salt as well.
After you have ground the peanuts, sesame, and salt finely, mix the mixture well, and you have completed the sesame salt part.
