How to Choose Fresh Ingredients
How to choose fresh chicken eggs
- Eggshell: Choose eggs with a thin white powdery layer on the outside; when touched, they feel rough or heavy, as these are fresh eggs. If the eggshell is smooth, shiny, or has cracks, the eggs have been stored for a long time and are not good.
- Shake gently: Hold the egg to your ear and shake it gently. If you hear a sound, the egg is old and has been stored for a long time. If you don’t hear anything but feel the egg moving strongly, it is spoiled, and may be in the process of hatching…
- Do not buy eggs that show signs of cracked shells as bacteria can easily enter, or if there are signs of white mold.
How to choose good salted eggs
- You should buy from reputable places, with intact packaging and a long expiration date. Avoid salted duck eggs that show signs of dark spots, mold, or a foul smell.
- If you have time, you can make salted eggs at home, which is safe and convenient; the recipe is very simple.
Where to buy pre-mixed sponge cake flour
- You should buy a pack of pre-mixed sponge cake flour from reputable establishments such as TasteVN, supermarkets, or markets to ensure quality and product origin.
- For packaged products, you should carefully check the expiration date, ensure the outer packaging is intact, not torn or discolored, and that the product inside is not moldy.

How to make salted egg sponge cake using pre-mixed flour
-
Bake salted eggs
First, place 6 salted egg yolks in a baking tray and put it in the oven, baking at 150 degrees Celsius for about 10 minutes.
After the yolks are cooked, take them out of the oven; cut 3 yolks in half and mash the other 3 yolks with a fork until smooth.
-
Mix the cake batter
Add the pre-mixed sponge cake flour into a bowl, crack in 2 eggs, and add 150ml of unsweetened fresh milk.
Then, use a hand mixer to beat on low to high speed for about 2 minutes until the batter is fluffy and smooth.
-
Baking the Cake
To maintain a stable oven temperature, preheat the oven to 180 degrees Celsius for 15 minutes.
Prepare a cake pan lined with parchment paper, then pour the cake batter in and gently tap the pan on the table to spread the batter evenly. Lower the oven temperature to 170 degrees Celsius and bake the cake for 30 minutes.
After baking for 15 minutes, open the oven, cover the cake’s surface with aluminum foil, and continue baking for another 15 minutes.
-
Making Cheese Sauce
Place a pot on the stove over low heat, and add 100ml of unsweetened fresh milk, 1/2 teaspoon of cornstarch, 1 tablespoon of sugar, and 4 Laughing Cow cheese cubes into the pot.
Use a whisk to stir evenly for 2 minutes until it thickens slightly, then season to taste and turn off the heat. Allow the sauce to cool slightly, then transfer the sauce into a piping bag.
-
Completion
The cake has cooled down; you cut the cake in half horizontally, add cheese sauce in the middle and spread the mashed salted egg evenly, then place the remaining piece of cake on top.
Next, spread the cheese sauce evenly on the surface of the cake, sprinkle with shredded pork, and add halved salted eggs to finish.
-

Tips for Successful Execution
- For baking, you should preheat the oven for about 10 – 15 minutes before baking and the preheating temperature is usually higher than the baking temperature by 10 – 20 degrees Celsius.
- To prevent the cake from sinking or getting a waist after baking, you need to ensure: bake the cake for the right amount of time and at the correct temperature, when the cake is done, slightly open the oven door to let the temperature decrease gradually, avoiding taking it out immediately. Additionally, after mixing the cake batter, bake it immediately; do not let it sit for too long as this will cause the air bubbles inside to burst, preventing the cake from rising.
- If the cake has a hard layer of egg at the bottom, it is due to the batter being too loose and the egg whites not being whipped to the right consistency.
