  • It is best to buy chicken with shiny yellow skin, not darkened, and without any unusual black or purple bruises on the surface.
  • Fresh and delicious chicken should have bright pink-red meat, and when you press it with your hand, it should feel soft, have good elasticity, but not be mushy or slimy.
  • In particular, you should avoid buying large-sized chickens that are too light in weight, as they may have been injected with water, which will not taste good.

How to Make Chinese-style Salt Steamed Chicken

  • Prepare Ingredients

    First, put the purchased chicken into a bowl with 3 tablespoons of white wine and a little salt, then use your hands to rub the surface for about 3 – 5 minutes. After that, rinse it several times with water until clean, and let it drain.

    For ginger, peel it, rinse briefly with clean water, let it drain, and then slice it thinly. For green onions, remove the roots, wash clean, let it drain, and cut in half.

    • To clean the chicken feathers, briefly blanch the chicken in boiling water with starfruit leaves for 3 – 5 minutes. Then, pull out the feathers forcefully, and rinse several times with water until clean.
    • Besides the method above to remove the chicken feathers, you can also briefly blanch the chicken with crushed papaya leaves for a few minutes.

    At the same time, you place the steaming basket on the stove with a little water in the bottom compartment and turn the heat to high for about 15 minutes. Once the water boils, place the marinated chicken in the top compartment and steam for 20 minutes.

    Next, reduce the heat to medium and steam for an additional 10 minutes. When the chicken is tender, turn off the heat, cover, and let it sit on the stove for 10 – 20 minutes before serving on a plate!
