- Prioritize choosing straight zucchinis that feel firm and not soft. The skin should not be scratched, bruised, or show signs of insect intrusion. The stem of the zucchini should be intact and fresh.
- Select zucchinis of moderate length, with consistent color not too dark green, as these are usually the ones that meet standards, not too young or too old.

Prepare the ingredients
Wash the beef thoroughly and cut it into thin, bite-sized pieces.
Peel the zucchini, trim both ends, and slice it into rounds about 1/4 of a finger’s width.
Peel, crush, and finely chop the garlic, then divide it into 2 portions.
Trim the roots of the green onions, wash them thoroughly, and cut them into pieces about 2 fingers long.
Simple ways to remove the smell of beef at home:- Remove the odor from the beef by rubbing it with salt and fresh ginger around the piece of beef for about 5 minutes, then rinse with water.
- Massage the beef with a little lemon or vinegar and let it sit for a few minutes before rinsing to make the meat more fragrant.

Marinate the beef
Put the beef in a bowl and then add 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of seasoning powder, 1/3 tablespoon of sugar, 1 tablespoon of soy sauce, 1/2 tablespoon of ground pepper, and 1/2 of the minced garlic.
Use chopsticks or plastic gloves to mix the beef well, cover the bowl tightly with plastic wrap, and marinate in the fridge for about 15 minutes so the spices can penetrate the meat thoroughly.

Stir-fry the beef with zucchini
Place a pan on the stove, add 1 tablespoon of cooking oil. When the oil is hot, add the marinated beef and stir-fry on high heat for about 2 minutes, then transfer the beef to a separate bowl.
Continue using that pan, add 2 tablespoons of cooking oil. When the oil is hot, add the remaining minced garlic and sauté it on high heat for about 30 seconds. Next, add the zucchini, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of salt, and 1 tablespoon of oyster sauce, stirring well. Add 3 tablespoons of water to prevent the zucchini from burning.
Cover the pan for about 3 minutes until the zucchini softens, then uncover and add the previously stir-fried beef, cooking for another 2 minutes. Add chopped green onions and stir-fry for an additional 30 seconds, then taste and adjust the seasoning to your preference before turning off the heat.
