Peanuts 125 gr Whole milk 700 ml Double cream 350 ml Chicken eggs 6 pieces Sugar 225 gr Vanilla extract 2 teaspoons

How to choose delicious and plump peanuts

  • You should choose large, round peanuts with balanced size; when you press them with your fingernail, they should feel firm and plump.
  • At the same time, good peanuts usually have a bright color, and the peanuts are evenly sized, without too many shriveled or rotten ones mixed in.
  • You absolutely should not choose peanuts that are moldy or have many unusual colors on the surface to ensure safety and deliciousness!

What is double cream? What can it be substituted with?

  • Double cream, also known as whipped cream or rich cream, is a dairy product with a high fat content of up to 48%.
  • Because of its rich flavor, double cream can be quite overwhelming; you should use it to make certain desserts like crème brulee or panna cotta to create a characteristic richness.
  • If during the cooking process you lack double cream, you can completely substitute it with whipping cream or heavy cream, however, be sure to adjust the amount of sugar added to ensure the dish’s flavor!

How to Make Peanut Ice Cream

  • Roast and crush the peanuts

    When you buy peanuts, pick out the bad, broken, or moldy ones and put them in a pan.

    Adjust the heat to low and stir continuously for about 15 minutes until the peanuts are fragrant and slightly browned.

    After roasting for about 5 minutes, place them in a zip bag and use a pestle to crush the peanuts, then pour them into a bowl and set aside.

  • Cook the peanut cream mixture

    Place a pot on the stove, add 700ml of whole milk, 350ml of double cream, and heat this mixture over medium-low heat.

    Once this mixture boils, add the crushed peanuts and 2 teaspoons of vanilla extract, and stir the cream mixture well.

    Cook for another 2 minutes, then turn off the heat, cover, and let it steep for 2 hours. After that, bring it to a boil again and strain the mixture to filter out the peanut residue.

  • Whip the cream

    Crack 6 eggs one by one and filter the egg yolks into a bowl, add 125g of sugar, and use a whisk to mix this mixture until smooth and completely combined.

    Next, slowly scoop the cream mixture into the egg bowl, stir well, and put it into a pot to heat. Adjust the heat to low, stir well until this mixture is heated to about 75 degrees Celsius, then turn off the heat and pour it into a bowl.

    Cover with plastic wrap and put it in the refrigerator for about 2 – 3 hours.

    After that, take the cream out, slowly pour it into the ice cream maker to mix until the cream is smooth and thick.

    Tip:
    • If you don’t have an ice cream maker, you can use a hand mixer to whip the mixture until it is smooth and has clear swirls.
    • To make the cream smooth and not icy, you should whip the cream and then put it in the freezer for about 1 hour, then take it out and whip it again. Repeat this process 2 – 3 times and the finished cream will be soft and delicious like ice cream made with an ice cream maker!

  • Make Crispy Caramel

    Put a pot on the stove, add 100g of sugar, adjust to medium heat, and stir until the sugar turns into liquid and has a brown color. Pour the caramel onto a tray and let it sit for about 1 hour until it hardens like candy.

    Then, use a spoon to break the caramel into pieces and mix well with the peanut butter cream mixture.

  • Complete and Freeze

    After the cream is whipped to a thick consistency, pour it into a mold and place it in the fridge for about 3 – 4 hours until the cream hardens and is ready to enjoy!
