Preliminary processing of lotus stem
After purchasing, clean off any dirt stuck to the lotus stem, then soak it in water with the juice of 2 lemons to keep the lotus stem white and clean.
Cut the lotus stem into pieces about the length of a finger and then cut them in half lengthwise. Continue soaking the lotus stem for another 30 minutes.
Rinse the lotus stem with clean water and then squeeze out the water from the lotus stem; you can use a cloth to make it easier to squeeze out the water.

Prepare the other ingredients
Peel the carrots, then shred them and squeeze out all the juice from the carrots. Do the same with the lotus stems.
Pick the leaves of the Vietnamese coriander and wash them clean. Squeeze the juice from 3 limes.
Remove all the insides of the squid, cut into bite-sized slices. Clean the shrimp, trim the antennae and legs.
Prepare a pot of about 1 liter of water, bring it to a boil and add 1/2 teaspoon of salt, and the remaining half of the lime. Then add the squid to boil for about 3 minutes until the squid firms up.
Add all the prepared shrimp into the pot, boil together with the squid until the shrimp is evenly cooked, then remove. Let the shrimp cool and peel off the shells.
