Fresh shrimp 300 gr Green pumpkin 1/2 piece (winter melon) Glutinous rice 100 gr Regular rice 100 gr Carrot 1/2 piece Mung beans 100 gr Shallots 3 pieces Green onions 2 stems Soy sauce 1 teaspoon Fish sauce 1 teaspoon Cooking oil 1 tablespoon Common spices a little (pepper/ salt/ seasoning powder)

  • You should choose shrimp that have a transparent outer shell and a slight smell of seawater, without any fishy odor.
  • Fresh shrimp will have their tails curled, their bodies slightly bent, firm but not unusually plump, with flexible shell joints, and the head and body of the shrimp tightly connected, not falling away from the body.
  • Avoid buying shrimp with tails splayed out, as these have likely been injected with chemicals or water to make them look plump.
  • It’s best to buy fresh shrimp from seafood shops or reputable supermarkets for safer usage!

  • You should choose large melons that feel firm in hand, with smooth green skin, plump, a large and fresh stem, as these are young melons that will have a delicious and sweet taste.
  • Avoid choosing melons that are dark green or black as these are older, have many seeds, and the flesh is hard, which will taste sour and can affect the flavor of the dish.

  • Prepare the shrimp

    Remove the heads, shells, and legs from the shrimp, then soak them in diluted salt water for 2 – 3 minutes and rinse with clean water. Use a knife to crush and chop the shrimp into small cube shapes.

    • Turn the shrimp over, hold the body with one hand, and use the other hand to peel the sides of the shrimp head.
    • Then, hold the connection between the head and the body firmly, and slowly separate the head from the body; the shrimp vein will be pulled out with the head.

    Next, add the chopped shrimp, 1/3 teaspoon of pepper, 1/3 teaspoon of salt, and 1 teaspoon of soy sauce to a plate, mix well, and marinate for about 15 minutes for the shrimp to absorb the seasoning.

    Wash the glutinous rice, regular rice, and mung beans twice with water, then soak for 60 minutes to allow the rice to expand evenly, then drain.

    Peel and wash the green squash and carrot, then dice them. Wash the green onions and finely chop the green parts. Peel and slice the shallots.

  • Sauté shrimp

    Add 1 tablespoon of cooking oil and half of the sliced shallots to a pan, stir until the shallots are fragrant, then add the marinated shrimp. Sauté over medium heat for about 2 minutes until the shrimp is cooked, firm, and fragrant, then turn off the heat.

    Boil 1.5 liters of water, then add the soaked white rice, cook for 3 minutes, then add the soaked sticky rice and cook for another 15 – 30 minutes until the rice is soft, then add the mung beans.

    Simmer for another 15 minutes until the porridge and mung beans are soft, then add the carrots, simmer for another 10 minutes, then add the zucchini and stir well.

    Simmer for another 5 minutes, then season the porridge with 1 teaspoon of seasoning powder, 1/2 teaspoon of pepper, 1 teaspoon of fish sauce, and 1/2 of the sautéed shrimp, then mix well. If it is not to your liking, you can adjust the seasoning according to your and your family’s preferences.
