How to Choose Fresh Ingredients
How to choose fresh shrimp
- When choosing shrimp, you should select those with hard, translucent shells, tightly attached to the flesh, especially having the smell of the sea rather than a fishy odor.
- Fresh and good shrimp will be straight or slightly curved, with the head and legs tightly attached to the body, and the tail folded together.
- Avoid purchasing shrimp that have a fishy smell, dark spots on the shell, uneven colors, are slimy, have tails that spread out, and heads and legs not tightly attached to the body. These are usually shrimp that have been injected with chemicals, water, or have started to spoil.
How to choose delicious and safe potatoes
- You should buy yellow potatoes instead of white ones, as white potatoes have fewer nutrients and are less sweet.
- Delicious potatoes, when held, feel firm, heavy, with smooth, intact skin, no blemishes, black spots, scratches, or signs of rot or leaking.
- Absolutely do not buy sprouted potatoes, those with green skin, as they are very toxic and harmful to health. You should also avoid potatoes with wrinkled skin, that feel soft when pressed, as most of these are old, shriveled, contain fewer nutrients, and have a bland taste.

Prepare the Shrimp
After buying the shrimp, wash them thoroughly, then peel off the shell, leaving the shell on the tail, and then remove the vein from the back.
Tips for quickly and cleanly removing the shrimp vein:- First, wash the shrimp, then hold the shrimp upside down so you can see the shrimp vein. One hand should hold the head of the shrimp, while the other hand holds the body near the head. Note that the two points of grip should be about 1cm apart.
- Next, gently bend the head of the shrimp, then gently squeeze from bottom to top to push the waste at the head of the shrimp out to the joint between the head and the body.
- Finally, just hold the shrimp part and slowly pull the shrimp vein out of the body. To avoid breaking the shrimp vein, do not pull too quickly.
-
Prepare the Potatoes
After peeling the potatoes, cut them into small pieces, wash them thoroughly, and soak them in diluted salt water for about 10 minutes to prevent browning. Then, rinse with clean water and steam until cooked for about 15 minutes.
Once cooked, transfer the potatoes to a bowl and mash them. Add 1 teaspoon of seasoning, 1/4 teaspoon of ground pepper, and 1 tablespoon of flour to the bowl of potatoes, then mix the mixture until smooth. After that, divide the potato mixture into 4 parts.
Next, crack an egg into a small bowl and beat it. Place the breadcrumbs into a small bowl.
-
Shape the shrimp wrapped in potatoes
First, you wrap the potatoes around the shrimp to form a round shape, with the shrimp tail sticking out.
Next, you roll the shrimp wrapped in potatoes through the beaten egg and then roll it through the breadcrumbs. You do this until all 4 portions are finished.
