  • Prepare the ingredients

    After purchasing the beef, wash it thoroughly with diluted salt water. If you can find fresh hot beef, you only need to rinse it briefly with water and then prepare it immediately to help the beef become softer and more flavorful.

    After washing, wrap the beef shank tightly and use string to secure it. The tighter you wrap, the firmer and tastier the beef will be after boiling.

    Steps to clean beef without odor:

    Usually, the ribeye and beef shank have less odor compared to the bone or rib parts. However, if you find the meat has a strong beef smell, you can reduce the odor by:

    • Method 1: Rubbing with crushed ginger (after roasting the ginger) and rinsing with clean water.
    • Method 2: Using a bit of salt to rub on the beef and then rinsing with water.

    Pour about 2 bowls of filtered water into the pot, then add the crushed ginger and lemongrass along with the prepared fish sauce. When the water starts to simmer lightly, add the beef to boil over medium heat.
