- You should select roots that are small to medium in size, with smooth skin, bright brown color, and no rotten spots on the body of the root.
- Fresh and delicious cassava roots should also have a weight corresponding to their size; if the root is large but light in weight, it is usually because it has been in the ground for too long, and the amount of water in the root has decreased significantly.
How to choose good tofu, without gypsum
- A good piece of tofu usually has an off-white color; if it has a yellowish or golden hue, it contains gypsum. The yellower the tofu, the more gypsum it contains.
- You should buy a piece of tofu that feels light and soft in your hand. If it feels heavy, firm, and somewhat hard, or is too square, you should pass on it.

How to make Stir-fried Cassava

Prepare vegetables
Cassava and carrots should be peeled, washed thoroughly, then drained and cut into strips.
Wash and cut the green onion into strips.
Peel, wash, and finely chop 5 cloves of garlic.

Prepare tofu
Tofu should be rinsed briefly in water and then drained well, before cutting into square pieces about 1/2 finger thick.
Heat a pan on the stove and add 3 tablespoons of cooking oil, heating it up. When the oil is hot, add the tofu and fry it for 5 – 7 minutes over medium heat until the tofu is evenly golden, then remove it to drain the oil.

Stir-fried cassava
Place a pan on the stove and set the heat to medium, add 2 tablespoons of cooking oil and sauté the garlic until fragrant. Once the garlic is aromatic, add the cassava and carrots.
After 5 minutes of stir-frying, season with 1 teaspoon of salt and 1/2 teaspoon of monosodium glutamate. After 2 minutes, add the fried tofu to the pan and continue to stir-fry on low heat for another 2 minutes.
Finally, add the green onions, stir well, adjust the seasoning to taste, and then turn off the heat.
