  • Mix banana with flour

The bananas you bought should be peeled, then use a knife to cut them into thin, even slices and place them in a large bowl. Then add 200g of sugar and mix well, letting it marinate for about 5 – 10 minutes.

Prepare another bowl for 300g of tapioca flour, 50g of glutinous rice flour, and 350ml of pandan leaf extract (you can prepare the pandan leaf juice in advance to save cooking time). Use a whisk to mix this flour mixture thoroughly, whisking continuously to prevent lumps from forming.

After the flour mixture is well combined, add the marinated bananas and mix everything together evenly.

How to choose fresh and delicious bananas

  • To make the cake more fragrant, you should choose Siam bananas or the green banana variety, which are usually more chewy, delicious, and sweeter than other types of bananas.
  • For this dish, you should choose ripe yellow bananas (fully ripe) to create a rich sweetness for the cake. Using bananas that are just ripe or still green will result in a cake that is not sweet and lacks the banana aroma.
  • You should avoid selecting bananas with cracks, black spots, or leaking water as these are not good bananas.

Should you use canned coconut milk or coconut milk powder?

  • Depending on your needs, you can choose either canned coconut milk or coconut milk powder for today’s cake!
  • For canned coconut milk, since it is sealed, it will not affect the flavor of the coconut milk. Additionally, you can use it immediately without further processing, saving you time.
  • As for coconut milk powder, you need to dissolve it in water before enjoying it. However, you can store the powder for a long time, unlike the canned version which must be used immediately after opening.
  • Moreover, you can also make your own coconut milk at home with the extremely simple recipe below from TasteVN!
