How to choose delicious fresh wild ducks
- Choose mature, fat wild ducks with round breasts and thick neck skin, with enough feathers.
- If buying pre-processed ducks, you should choose those that have just been slaughtered, with yellowish skin that is not too dark, and when pressed lightly, the duck meat has good elasticity.
- Avoid choosing ducks with unusual odors or soft, mushy meat as this may indicate they have been injected with water.
