  • Prepare the pomfret fish

    Clean the pomfret fish by removing the gills, cutting off the fins, and then scraping off the slime with a knife.

    Then rinse the fish with diluted salt water, and wash it again with clean water, continuing to cut the fish into bite-sized pieces about the size of a finger joint.

    How to eliminate the fishy smell of pomfret: Before cutting the pomfret into pieces, you can soak it in a solution of water and vinegar in a suitable ratio for about 5 – 10 minutes, which will help eliminate quite a bit of the fishy smell and remove the slime, making the dish tastier.

    Green onions washed and cut into bite-sized pieces. Shallots peeled and sliced thinly.

    Chili cut diagonally into thin slices.

  • Fry the fish

    Place a pan on the stove and heat 4 tablespoons of cooking oil.

    When the oil is hot, add the pomelo fish and fry for about 5 – 7 minutes until both sides are golden, then remove the fish to a plate.

  • Making Tomato Sauce Fish

    Utilizing the oil used for frying the fish, add half of the green onions to sauté until fragrant over medium heat.

    Then add the tomatoes and stir-fry until they are soft and start to blend into a sauce.

    At this point, add the fried pomelo fish into the tomato sauce, reduce the heat to low, and cook for about 3 – 5 minutes.

    Add 2 tablespoons of fish sauce, 1 tablespoon of sugar, and 1 teaspoon of monosodium glutamate into a bowl, mix well with half a cup of cold water until the seasonings dissolve, then pour the mixture into the pot with the tomato fish sauce.

    Continue to cook until the fish absorbs the sauce. Remember to frequently use a spoon to drizzle the tomato sauce over the fish so that it evenly absorbs the flavors.

    Cook the fish for about 10 – 15 minutes, when the tomato sauce thickens, sprinkle the remaining green onions, sliced onions, and chili on top, then turn off the heat.
