How to Choose Fresh Grouper
- You should choose to buy grouper (black grouper) for the hot pot, as this type of grouper has thick flesh and won’t fall apart when cooked.
- Fresh grouper usually has a black and white speckled pattern, shiny scales, and clear, slightly bulging eyes.
- Prioritize choosing fish that feel firm to the touch, with intact fins and gills, not slimy or having an unpleasant odor.

How to make Hotpot with grouper fish and lime

Prepare the grouper fish
Wash the grouper fish thoroughly with water, scrape off the scales, then cut off the fins, gills, tail, and remove the internal organs from the fish’s belly.
To eliminate the fishy smell, soak it in a saltwater mixture for about 10 minutes and then rinse it thoroughly!
Next, use a knife to fillet the fish, then cut it into bite-sized pieces, sprinkle with a few slices of ginger and chili, and place it in the refrigerator until ready to eat hotpot.

Prepare other ingredients
Extract the juice from the tắc, discarding the seeds. Wash the chili, remove the stem, and chop finely.
Peel the shallots and garlic, then chop finely. Wash the lemongrass, crush it, and cut it into sections.

Cook the hotpot broth
Place a pot on the stove over medium heat, add 2 tablespoons of cooking oil, and wait for the oil to heat up. Then add the shallots, garlic, ginger, chopped chili, and lemongrass to sauté until fragrant.
Next, add 2 liters of coconut water and bring to a boil, then season with 2 tablespoons of rock sugar and 2 tablespoons of seasoning.
Once the hotpot broth comes to a boil again, reduce the heat, add the tắc juice, 5 kaffir lime leaves, and adjust the seasoning to taste. That’s the hotpot broth done!
