How to choose fresh and delicious mud crabs
- Choose large ones with firm meat. Especially those that are still carrying eggs, as they tend to be fragrant and rich in flavor.
- You can try breaking the claws of the mud crab; if the meat is plump, it means it’s good quality, but if it’s hollow, it usually has less meat.
- The best time to buy mud crabs is during the rainy season (around the 8th to 10th lunar month), so you should buy them on these days for tastier dishes.
How to cook Roasted Mud Crab

Prepare the mud crabs
After buying the mud crabs, wash them with diluted salt water. You can soak them for about 3 – 5 minutes. Then rinse several times with clean water and let them drain in a colander.
Note: Depending on your preference, you can leave them whole or remove the shell before stir-frying.

Prepare tamarind sauce
First add 50g of soaked tamarind, 3 tablespoons of sugar, 1 tablespoon of fish sauce, and 1/2 teaspoon of monosodium glutamate into a bowl. Pour in about 100ml of warm water. Use chopsticks to mash the tamarind and stir the mixture until the sugar and monosodium glutamate dissolve.
Then, chop the chili finely and add it to the tamarind sauce, mix well again. Soak the mixture for about 10 minutes to let the tamarind release its sourness.

Fry the crab
Place a pan on the stove and add cooking oil, then heat it up. When the oil starts to boil, add the crab into the pan and fry over medium heat to ensure the crab cooks evenly and becomes crispier.
Next, use a ladle to take the crab out, gently shake off the excess oil, and place it on a plate.
Tip: You should fry the crab submerged in oil and can do it in batches; this will help the crab cook evenly and become crispier. Frying over medium heat will prevent the dish from burning and make it safer for you.

Making crab with tamarind sauce
Place a clean pan on the stove, then add about 2 tablespoons of cooking oil. When the oil is hot, add about 1 tablespoon of minced garlic to the pan and sauté until fragrant.
Next, pour all the fried crabs into the pan, stirring well to coat them with the minced garlic.
Finally, pour the tamarind sauce mixture into the pan, mix well and stir-fry for about 5 minutes so that it absorbs into the crabs, season to taste, then turn off the heat.
