Mixing the Flour
Put the tapioca flour into a bowl and then gradually add the agar powder and sugar. Mix everything well together.
Slowly add boiling water to the flour mixture and gently use a flat whisk to mix evenly. Wait for the dough to cool slightly, then knead with your hands until the dough becomes smooth and pliable.
After that, shape the dough into small balls that are bite-sized. To prevent the tapioca pearls from sticking together, after rolling the balls, coat them with dry tapioca flour one more time.

Boiling the Tapioca Pearls
Place a pot on the stove and add about 1 – 1.5 liters of water, then bring it to a boil. If the water amount is low or evaporates during cooking, you can add more water!
Add the tapioca pearls to the pot of boiling water, continuously stirring with chopsticks to prevent the pearls from sticking to the bottom of the pot.
When the tapioca pearls start to float, gently stir with chopsticks and cook for another 10 – 15 minutes. Once the pearls begin to sink, turn off the heat, cover the pot, and let the pearls sit for another 15 – 20 minutes!
After that, scoop the tapioca pearls out and immediately soak them in cold water for about 5 – 7 minutes to make them firmer and chewier. If you prefer sweetness, you can add sugar and soak it together with the tapioca pearls!

Brew the tea
Put a pot on the stove, add 700ml of water to the pot and bring it to a boil over high heat. After about 7 – 10 minutes when the water begins to boil, add the tea bag to the pot and turn off the heat.
Cover the pot and steep the tea for 10 minutes, then remove the tea bag and let it cool.

Making milk tea
Add heavy cream to a bowl and use a whisk to whip it for about 5 – 10 minutes until the cream thickens and becomes a bit viscous.
After the tea has cooled, add 60ml of passion fruit syrup to the tea and stir well until the syrup is fully dissolved. Scoop the tapioca pearls into a glass, add ice, and then pour the brewed tea until the glass is half full.
Finally, use a spoon to scoop the whipped cream mixture on top until the glass is full.
