Prepare and boil the clams
Wash the clams thoroughly, then soak them in water with a bit of salt and 5 chopped chili peppers for 2 hours to allow the clams to expel dirt and sand.
After that, place the clams into a pot, add 1/2 bowl of water and boil until you see the clams just start to open, then turn off the heat. Remove the clams to a basket to cool down, then separate the meat from the shell.
Wash the clam meat once more to remove all sand and dirt, then let it drain.

Prepare other ingredients
Cucumbers should be washed, cut into quarters, and if desired, you can peel them, remove the seeds, and cut diagonally into bite-sized pieces. Green onions should have their roots and wilted leaves removed, washed, and cut into bite-sized pieces.
Tomatoes should be washed and cut into quarters. Pineapple should be peeled, eyes removed, and cut diagonally into bite-sized pieces. Onions should be peeled and cut into wedges. Vietnamese coriander should be washed, and leaves and young tips should be picked and chopped.

Sweet and Sour Stir-fried Razor Clams
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up. Add 1/2 tablespoon of minced garlic and 1/2 tablespoon of minced onion, then sauté until fragrant.
Add the razor clam meat and stir-fry for 3 – 4 minutes. Season with 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of satay. Stir well to ensure the seasoning absorbs into the razor clams, then transfer the stir-fried clams to a plate.
Place the pan back on the stove, add 2 tablespoons of cooking oil and heat it up. Add 1/2 tablespoon of minced garlic, 1/2 tablespoon of minced onion, and 1 teaspoon of minced chili, and sauté until fragrant.
Increase the heat and add the onion, tomato, pineapple, and cucumber, stir-frying for 3 – 5 minutes until the vegetables are cooked and the onion turns translucent. Season with 1 tablespoon of plum sauce and 1 tablespoon of ketchup. Stir for another 1 – 2 minutes.
Add the previously stir-fried razor clams back in, stir well. Add 1 tablespoon of lemon juice and 1 tablespoon of fish sauce, and mix thoroughly. Adjust seasoning to taste.
Dissolve 1/2 tablespoon of cornstarch in 1/2 cup of water, stir until the mixture is well combined, then pour it into the pan, stirring until the starch is cooked and the sauce thickens, then add the chopped green onions and turn off the heat.
