  • For pre-packaged types, check the expiration date, ensure the packaging is intact, and observe for any signs of mold or foam.
  • Choose pickled mustard greens that are yellow to orange in color, as these are sufficiently sour for cooking. Greens that are still green indicate that the pickling process is incomplete, and they will taste spicy, bitter, and not delicious when eaten.

  • Prepare the ingredients

    For the pork ribs, use a knife to cut them into bite-sized pieces, then rub with salt for about 5 – 10 minutes, after which rinse thoroughly with water and drain.

    • Method 3: Using shallots and garlic to marinate the ribs is also an extremely effective way to eliminate odors while adding delicious flavor to the dish.

    To reduce the sourness and dirtiness of sour vegetables, soak the vegetables in water for about 30 – 60 minutes, then take them out, rinse thoroughly, and squeeze dry.
