How to choose fresh fish
- You should buy live fish that are active and have a moderate weight.
- Observe the gills when buying; if they are bright red, it means the fish is still alive or just recently died.
- Choose fish with shiny scales, intact, and not too many scales peeling off.
- The fish should feel firm to the touch, the flesh should not be mushy and should not have a foul smell.
- Avoid buying fish that are too small or too large as they may have been injected with water. Do not choose fish with peeling scales and a fishy smell.

Cooking fish
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up, then add all the minced lemongrass, turmeric, shallots, and garlic to sauté until fragrant.
When the ingredients in the pan are aromatic, add the Linh fish, then add 1 tablespoon of fish sauce, 1 teaspoon of pepper, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1 teaspoon of chili powder, and 50ml of water into the pan.
Continue to cook over medium heat until the water in the pan boils, then reduce the heat and continue to simmer for about 15 minutes until the water reduces, thickens, and the fish is tender and absorbs the seasoning evenly.
Tip: Since Linh fish is quite soft, during the cooking process, limit flipping the fish too many times to avoid breaking it.
Finally, add sliced green onions and chili on top, adjust the seasoning to taste, and then turn off the heat.
