How to choose good fresh figs
- To buy good fresh figs, you should choose glutinous figs, which are green in color, and when purchasing, still have the whole bunch, with fresh stems and uniform size of the fruits.
- Good figs will have a pinkish-purple core when cut open.

How to prepare salted figs with lemongrass and chili

Prepare the figs
After buying the figs, wash them clean and slice them thinly.
Then, soak them in salt water for about 30 minutes to remove the sap; this will reduce the bitterness of the figs.

Prepare other ingredients
Meanwhile, peel and rinse the garlic with clean water and then mince it finely.
Wash the lemongrass and chili clean, then chop them finely.

Make the garlic chili salt
Next, add 2 tablespoons of sugar, 1 tablespoon of salt, and 2 teaspoons of vinegar into a bowl, and stir well until the sugar completely dissolves.
Gradually add the minced lemongrass, garlic, and chili into the seasoning bowl, mixing all the ingredients thoroughly together.

Making pickled fig with lemongrass and chili
After 30 minutes, take the figs out, rinse with clean water, drain, and put them in a bowl.
Next, add the garlic chili salt seasoning you just prepared to the figs and mix well.
Finally, let the figs marinate for about 30 minutes to absorb the seasoning, and they will be ready to eat.
