  • You should choose fresh pork pieces that are pink or light red, with fat that is translucent white with a slight cream color, the meat fibers should be slightly firm, and the surface should be dry.
  • When you smell it, you should detect the characteristic aroma of meat, and when you press with your hand, the meat should be firm and elastic, not mushy or slimy, indicating good pork.
  • You should avoid choosing meat that is pale or too dark in color, shiny and slimy surfaces, has an unusual odor, or smells fishy, with the fat and lean meat separating, and if you touch it, yellow liquid leaks out, as this indicates the meat is not good or has spoiled.

  • To buy good Ba Tri chili, you should choose evenly sized chilies that are not bruised or spoiled, with a straight or slightly curved shape, feel firm and hard to the touch, have shiny skin, and the stems are still fresh and green.

  • Prepare the ingredients and marinate the meat

    Wash the pork thoroughly, drain it, slice it thinly, and then place it in a bowl.

    Wash the Ba Tri chili and cut it into bite-sized pieces, and for the garlic, peel and mince it finely.

    Then, add 3/4 tablespoons of salt, 1/2 tablespoon of seasoning powder, 1/4 teaspoon of ground pepper, and 1 tablespoon of cooking oil into the bowl with the pork, and mix well to marinate for at least 30 minutes.
