How to choose good clams:
- If you buy fresh clams, choose those that are still alive, fresh, and have no strange smell. The best way is to touch the clam; if it closes its shell, it is fresh.
- If you buy pre-processed clams, pay attention to the expiration date printed on the packaging. You should not buy frozen clams or those in plastic bags as they will not be fresh and can easily be contaminated.
How to choose good cucumbers:
- You should choose cucumbers that are bright green, relatively even in color, with no dark spots or yellowing, as these are signs that the cucumbers have been stored for too long and are starting to spoil.
- You should choose straight cucumbers, with little or no curvature. Cucumbers that are elongated and uniform in size are the type that is crispier and tastier than the short and round ones.
- You should select heavier cucumbers, which are firm, have smooth skin, and no blemishes, and it is better to choose smaller ones as they tend to be sweeter than larger cucumbers.
- You should not buy cucumbers that bulge out, are thick in the middle or have a large head and a small tail (and vice versa) as these are overripe cucumbers, with many seeds, hard, and not tasty.
How to choose tomatoes:
- You should choose tomatoes with smooth, shiny skin, plump and juicy with a bright red color, and the stem should still be green.
- You should not choose those that are bruised or have small black spots, or those with uneven colors of both green and red.
- If you touch them and they feel too soft or too hard, or if juice comes out, you should not buy them, as they may be spoiled.

How to prepare Stir-fried Clams with Cucumber and Tomato

Prepare the ingredients
After washing the clams thoroughly, boil them in hot water and quickly transfer them to a bowl of cold water to prevent them from shrinking.
How to clean clams: Soak the clams in rice washing water or cold water, adding a few chopped chilies or a little rice vinegar and let them soak for 1 – 2 hours so that the clams can release all the dirt.
Wash the vegetables and fruits, then cut the celery into pieces about 2 finger lengths, cut the tomatoes into wedges, and halve the cucumber, then continue to slice it diagonally about 1/2 finger thickness.

Stir-fry the clams
Heat up a pan, add 2 tablespoons of cooking oil, then add all the minced garlic to sauté until fragrant.
Continue to add the clams and stir-fry over medium heat for about 4 – 5 minutes until the water is reduced. Add 1 teaspoon of salt, 1 teaspoon of seasoning, and 1 teaspoon of sugar and stir well.
