Prepare the bell peppers
Wash the bell peppers, remove the seeds, slice them into strips, and chop them into small pieces.

Sauté bell peppers
You place a pan on the stove over medium heat, add 1 tablespoon of olive oil to the pan, and when the oil is hot, add minced garlic to sauté until fragrant.
Next, add shallots and bell peppers and sauté for about 5 minutes until the ingredients are just cooked, then turn off the heat and transfer the sautéed peppers to a bowl to cool.

Mix the filling
Add 1/4 teaspoon of salt to the minced chicken breast in a bowl and use a spoon to mix well so that the chicken absorbs the seasoning.
Then add the sautéed bell peppers and 1/2 teaspoon of pepper and mix well.
To make the filling more fragrant, add 2 tablespoons of yogurt to the filling and mix well. If you want the filling to be chewier, use a spoon to mix well for about 10 minutes.

- When mixing the filling, do not add cooking oil to avoid stickiness because while we mix the filling, it will bind together to create a chewy, elastic texture. Adding oil or fats will prevent the filling from binding together, resulting in a crumbly and loose texture.
- Use a spoon to mix the filling evenly along the sides of the bowl, in one fixed direction until you see the filling sticking to the spoon, and forming a sticky mass indicates that the filling is ready.
- Mixing the filling is the most important step; you should pay close attention to this step as it determines the taste and chewiness of the filling. If you don’t mix well, the filling will be very crumbly when cooked.

Steaming the sausage
You put the sausage filling into a rectangular tray (20cm x 15cm x 10cm or any tray you have), use a spoon to spread the filling evenly.
