  • Kneading the tapioca flour

    Wash the pandan leaves, roll them into a bundle, and put them into a pot to boil with 450ml of water. After the pot of pandan water boils, turn off the stove, let it cool to warm, and use the pandan water to knead the tapioca flour.

    Put the flour in a small bowl, gradually pour in the pandan water, mix well, and knead the flour by hand until it forms a smooth, pliable dough.

    Cover the bowl tightly and let the dough rest for about 30 minutes.

    • Make sure to knead the dough evenly to avoid clumping.
    • Kneading the flour with pandan water will give your cake a distinctive aroma.

  • Stir-fried filling

    Place a pan on the stove, heat 3 tablespoons of cooking oil, add small pieces of fried tofu skin until crispy and then remove. In the same pan, add the milk sausage and diced tofu to fry until crispy.

    Remove the tofu and milk sausage, add a bit of finely chopped green onions and sauté until fragrant. Next, add finely diced carrots, chopped snow fungus, and finely diced shiitake mushrooms, stir-fry, then add the previously fried tofu, tofu skin, and milk sausage, mix together, seasoning with 1/2 teaspoon of monosodium glutamate, 1 teaspoon of vegetarian seasoning, 1/2 tablespoon of vegetarian fish sauce, and 1/2 tablespoon of sugar.

    Stir-fry until the filling is cooked, then add the remaining green onions, stir a few more times, turn off the heat, and wait for it to cool.

  • Make sweet and sour vegetarian fish sauce

    Add 1 tablespoon of sugar and 100ml of filtered water to a pot, bring to a boil to dissolve the sugar, turn off the heat, wait for it to cool, then add 1/2 tablespoon of minced garlic, 2 tablespoons of minced carrot, 1/2 tablespoon of minced chili, the juice of 1 lemon, 2 tablespoons of vegetarian fish sauce, and stir well.

  • Wrap the cake

    Similar to wrapping dumplings, take a sufficient amount of dough, roll it into a ball, then flatten it. Scoop a bit of filling into the center of the dough piece, fold the dough over the filling, and then press the edges of the dough together to seal. Continue this process until all the ingredients are used up.

  • Boil the cake

    Add 1 tablespoon of cooking oil to the pot of water, bring to a boil. Add the cake and boil for about 5 minutes, when you see the cake floating on the surface of the water and the cake turns translucent, it is done.

    To make the cake firm and not mushy, once the cake is cooked, quickly remove it and drop it into a bowl of ice-cold water, wait for the cake to cool completely before taking it out on a plate to enjoy.

  • Prepare the cake filling

    First, peel the carrots and cassava you bought, wash them directly under running water until clean, drain, and dice with a knife.

    Remove the roots from the enoki mushrooms, then wash them with clean water, drain, and cut into bite-sized pieces. Peel the shallots and garlic, then mince them finely.

    Next, put all the diced carrots, cassava, enoki mushrooms, shallots, and half of the minced garlic into a bowl to marinate with 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of ground pepper, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of vegetarian fish sauce, use a spoon to mix well and let it sit for 10 – 15 minutes to allow the mixture to absorb the spices.

    Meanwhile, heat a pan on the stove with 2 tablespoons of cooking oil over medium heat. Once the oil is hot, add the remaining minced garlic to sauté until fragrant.

    Next, add the marinated mixture to the pan, using chopsticks to stir-fry for about 7 – 10 minutes, until all ingredients are cooked and tender, then season to taste and turn off the heat, transferring it to a plate.

  • Prepare the dough

    You take 450g of tapioca flour into a bowl and gradually add 100ml of boiling water, using a spoon to mix well. At the same time, use your hands to knead the dough for about 3 – 5 minutes, until the dough becomes smooth and elastic, no longer sticky to your hands.

    Next, take a moderate amount of dough and place it on a flat surface like a cutting board, then spread it evenly, add a little of the filling you just sautéed in the middle, fold it in half, and use your hands to press the edges tightly. Keep doing this until all the filling and dough are used up.

    Then, put a pot on the stove with 1 liter of water and bring it to a boil over high heat. Once the water is boiling, add all the dumplings you just wrapped and boil them for about 10 – 13 minutes.

    When the dough becomes transparent and floats to the surface of the water, it means it is cooked. Then turn off the heat, remove them to a bowl of cold water and soak for another 5 minutes, then serve on a plate to enjoy.

    Tip: To avoid the dumplings sticking together while boiling, after wrapping, you can lightly coat them with a layer of tapioca flour again.
