How to choose fresh and delicious pork belly
- You should choose pork belly that has a dry outer membrane, light red or bright pink color. When cut with a knife, the meat should be light pink, slightly shiny, and the layers of fat in between should be bright white.
- Prioritize buying pork belly with a balanced ratio of fat and lean meat so that it doesn’t dry out when fried.
- It is best to buy pieces of meat that have a firm texture, with the meat and fat tightly adhered to each other, and when lifted, they should not feel too loose. The layer of skin and outer fat should be about 2cm thick.
- Avoid buying pieces of meat that have an unpleasant smell or are slimy because that means the meat has been stored for a long time and is spoiled, which can be very harmful to health when consumed.

How to make steamed rice with roasted pork

Prepare the steamed rice flour
Add 200g of rice flour, 100g of tapioca flour, and 1 teaspoon of salt to the bowl and mix well.
Next, add 600ml of filtered water to the flour bowl and stir until the flour is completely dissolved, then let it rest for at least 1 hour.
After resting, before steaming the rice cake, add 1.5 tablespoons of cooking oil to the flour bowl and gently stir well.

Spread the wet cake using a non-stick pan
Place a non-stick pan on the stove, wait for the pan to heat up, then pour the flour in, stirring the bowl of flour each time you scoop out the flour to ensure it is even.
When pouring the flour into the pan, shake the pan so that the flour spreads evenly across the surface. Cover the pan for 2 minutes, keeping the heat at the lowest setting and wait for the flour to become translucent, indicating that the wet cake is cooked.
Next, roll the cake and arrange it on a plate. You do the same until you run out of flour!

Prepare the pork
After purchasing the pork belly, wash it clean and blanch it briefly in boiling water.
To dry the piece of meat, you proceed to dry the skin using a hair dryer.
Tip: If you have time, you can sun-dry the piece of pork in direct sunlight for about 2 hours; this way, the skin will puff up and become crispier after roasting! -
Baking pork with an air fryer
First, you wrap the pork belly in aluminum foil and cover the surface of the pork skin with 200g of salt.
Roast the salted pork piece in the air fryer at 200 degrees Celsius for 20 minutes.
Then, take the pork piece out, remove the layer of salt, and replace it with another layer of aluminum foil, then continue roasting the pork in the air fryer at 200 degrees Celsius for another 40 minutes.
If the pork skin is crispy and has turned golden brown, it’s done; if not, roast it for another 5 – 7 minutes!

Make dipping sauce for steamed rice cake
Put 4 tablespoons of water, 2 tablespoons of sugar, 2 tablespoons of fish sauce into a bowl, stir well to dissolve, then squeeze the juice of 1 lime, add 1/2 teaspoon of minced garlic and 1/2 teaspoon of minced chili.

You wash the cucumber and the fresh herbs served with it, slice the cucumber thinly and arrange it on a plate with the fresh herbs.
The crispy pork should be chopped into bite-sized pieces. Sprinkle a little fried shallots on top of the steamed rice cake.
