Prepare the dipping sauce for the wet cake

Frying Shallots
Peel the shallots and slice them thinly.

Tip:
- You should put the shallots in the freezer for about 15 minutes before cutting them to avoid eye irritation.

Tips for crispy fried shallots:
- When buying, you should choose medium-sized shallots, avoid selecting ones that are too large.
- After peeling the shallots, soak them in diluted salt water for about 30 minutes; this will help make them crispier when frying.

Soak the Rice Paper
