Preparing the squid
After purchasing the squid, pull the head away from the body and remove the ink sac and digestive organs.
Then, pull out the white backbone on the squid’s back and rinse the squid several times with clean water, then remove it and let it drain.

Prepare other ingredients
Peel the ginger, wash it clean, and slice it. Peel the shallots and garlic, wash them clean; take 1 shallot to slice for steaming the squid, and finely chop the remaining shallot along with the garlic.
Wash the chili, remove the stem, finely chop 1 chili, and remove the seeds from another chili then cut it into strips. Remove the roots from the green onions, wash them clean, divide them into the white parts and the green parts, then chop them up.

Place a steaming pot on the stove, turn the heat to medium, add the squid, then evenly distribute the sliced shallots and ginger over the squid. Cover and steam for about 4 minutes, then turn off the heat.

Place a pan on the stove, add 1 tablespoon of cooking oil and 1 tablespoon of sugar, cooking over medium heat.
