How to Choose Good Salted Figs

  • You should choose salted figs that have a bright and beautiful color, are uniformly round, still quite firm, have a natural fermented smell, and especially the brine is clear.
  • Avoid choosing salted figs that are dark, misshapen, have many tiny spots on the surface, feel soft and mushy when touched, and have an unusual foul smell as they may have been soaked too long.

  • Prepare the ingredients

    Salted Fig should be washed thoroughly with water, then use a knife to cut it into 3 or 4 pieces horizontally. Peel and wash the shallots and garlic, then slice them thinly.

    Wash the lime leaves and cut them into small pieces.

  • Make Garlic Stir-Fried Fig

    First, heat a pan on the stove and add 4 tablespoons of cooking oil to heat over medium heat. When the oil is hot, add the shallots and garlic to sauté until fragrant.

    When the shallots and garlic are golden and aromatic, add all the salted figs and stir-fry for about 5 minutes, then season with 1 tablespoon of seasoning powder, 1/2 tablespoon of monosodium glutamate, and 1 teaspoon of fish sauce.

    Continue to stir-fry for about 10 – 15 minutes until the figs are firm.
