Bok choy 400 gr Chicken intestines 200 gr (a set of chicken intestines) Shallots 1 bulb (minced) Oyster sauce 1 tablespoon Cooking oil 1 tablespoon Salt 1 tablespoon Common seasoning a little (salt/ seasoning powder/ monosodium glutamate/ ground pepper)

  • Good bok choy has a fresh green color, thick leaves, smooth texture, and feels heavy in hand.
  • Should buy bok choy with pale green stalks, moderate leaf ribs, and firm, juicy leaves.
  • Do not buy bok choy with wilted leaves, yellowing, dark spots, or bruises.

How to Prepare Stir-fried Bok Choy with Chicken Intestines

  • Prepare the Ingredients

    To eliminate the unpleasant smell, soak the chicken intestines in a mixture with 1 tablespoon of salt, then rinse thoroughly and drain.

    Cut the chicken intestines into bite-sized pieces, marinate with 1/2 tablespoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 1 teaspoon of ground pepper. Let it sit for about 20 minutes to absorb the flavors.

    How to Clean Chicken Intestines Properly
    • Method 1: The simplest way to eliminate the smell from chicken intestines is to rub them with coarse salt for about 3 minutes, then rinse under running water until clean.
    • Method 2: Blanch the chicken intestines for about 2 minutes in boiling water mixed with a little smashed ginger, white wine, and salt, then remove and rinse with water, and let drain.
    • Method 3: Use a mixture of vinegar (or lemon juice) and salt to rub the intestines thoroughly for 2 minutes to help clean and remove the odor.

    Separate the bok choy leaves, wash them thoroughly, and let them drain. You can also cut them into pieces about 2 finger lengths if you prefer.
