How to choose good tofu
- About color: Good tofu, which does not contain gypsum inside, will have an off-white color like soybeans. Conversely, if the tofu contains gypsum or has been stored for a long time, it will have a yellowish tint.
- About smell and taste: You should buy tofu pieces that have a fragrant smell and the rich, characteristic taste of soybeans. Avoid purchasing pieces that have a faint lime smell, as they will taste bland, dry, and crumbly, which may indicate the presence of impurities.
- About weight and elasticity: Good tofu will have good elasticity; when picked up, it will feel light, especially smooth, not dry and hard, and easy to crumble.
- You should choose to buy from reputable places to ensure quality.
How to choose fresh straw mushrooms
For fresh straw mushrooms
- Good straw mushrooms are those that are still in bud, not yet bloomed, looking fresh, with a slightly round or cylindrical shape, uniform size, and when touched and gently squeezed, they feel slightly firm.
- You should choose to buy straw mushrooms that are black or gray rather than white ones, as they will taste better.
For dried straw mushrooms
- The shape of dried straw mushrooms is similar to that of fresh straw mushrooms. You should choose to buy mushrooms with a uniform size. Pay special attention to avoid purchasing if the mushrooms have a musty smell.
- You should buy from reputable places, carefully checking the information about the origin, expiration date,… printed on the product packaging.
How to choose fresh and delicious chicken thigh mushrooms
- Fresh and delicious chicken thigh mushrooms will have bright colors, measuring 12 – 15cm in length. Avoid buying mushrooms that are too long because the inside will be hollow and lack fresh flavor.
- You should choose mushrooms that have a round cap, brown color, shiny, without scratches or tears, and no bruises or wrinkles. If they are fresh mushrooms, there will be a thin layer of fibers on top of the cap. The stem should be white, looking and feeling very firm, with uniform color.
- If still fresh, chicken thigh mushrooms will have a very distinctive aroma like almonds. Do not choose mushrooms that have an unpleasant smell or are bruised.
How to prepare Stuffed Tofu with Mushrooms

Prepare the tofu and mushroom filling
After purchasing the tofu, wash it clean, then use a knife to make a cut on the shorter side, scoop out the tofu inside, ensuring not to tear the tofu.
Straw mushrooms and chicken thigh mushrooms should have their stems cut off, then soak in salted water for about 10 minutes, and wash thoroughly. After that, chop the mushrooms and mix well with the tofu filling just taken out.
After mixing well, season the mushroom filling with 1 spoon of seasoning powder, 1 teaspoon of ground pepper, a little chopped green onion, and marinate for 5 minutes to let the filling absorb the seasoning.

Stuff mushrooms into tofu
After the mushroom filling has absorbed the seasoning, you stuff the mushroom filling inside the prepared tofu.
Next, place a non-stick pan on the gas stove and add 1 tablespoon of cooking oil to the pan. When the oil is hot, add the stuffed tofu and fry until golden brown on all sides.
Then use blanched chives to tightly tie the ends of the tofu piece to prevent the filling from falling out.

Make the sauce and stir-fry the tofu
First, place a non-stick pan on the stove, then add 1 tablespoon of cooking oil. When the oil is hot, add 1 tablespoon of minced shallots and sauté until fragrant. If there is leftover filling, stir-fry it together as well.
After the shallots turn golden and fragrant, season the pan with 1 tablespoon of chili sauce, 1 tablespoon of soy sauce, 1/2 tablespoon of oyster sauce, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of seasoning powder, stirring well to dissolve the spices before adding the fried tofu.
Finally, add 2 tablespoons of water to the pan and cook over medium heat until the tofu absorbs the flavor and the sauce thickens. You can adjust the seasoning to your taste before turning off the heat.
