How to make Clay Pot Rice

Cook white rice
Put the rice into a clay pot and soak it in water for about 5 minutes, then rinse it clean with water 2 – 3 times.
Brush a layer of sesame oil (1/2 tablespoon) at the bottom and rim of the clay pot, then add the rice and 300ml of filtered water.
Place the pot on the stove and cook over medium heat for 10 – 15 minutes, then reduce the heat to low and cook for another 10 minutes until the rice is fully expanded.

Prepare the ingredients
Peel and wash the shallots and garlic, then slice them thinly. Wash the bok choy and let it drain.
Peel the corn, and cut out the kernels. Slice the sausage thinly.
Soak the shiitake mushrooms in water for about 10 minutes to soften, then rinse again with water and chop into bite-sized pieces.

Cooking the sauce
Place a pan on the stove with 1 tablespoon of cooking oil over medium heat. When the oil is hot, add the sliced garlic and shallots to sauté until fragrant.
