How to make Corn Milk using a Slow Juicer

  • Prepare the corn

    First, you need to remove the husk and silk from the corn. Discard the husk and keep the silk to cook for the water.

    Next, use a knife to cut the corn kernels into a bowl, and keep the corn cob to cook with the silk.

  • Boil the corn cob and silk

    Add the corn cob and silk into a pot, add 1 liter of filtered water, cover tightly and boil for 15 minutes over medium heat to extract the sweet water.

  • Make the corn milk

    Put the cut corn kernels into the slow juicer and extract the juice. The machine will filter out all the pulp, and you won’t have to strain it again after juicing.

  • Cooking corn milk

    After boiling for 15 minutes, remove all the corn husks and corn silk, then pour the corn juice you just extracted and 1/2 teaspoon of salt in, stirring continuously over medium heat.

    After about 15 – 20 minutes, when the corn juice thickens, pour in 500ml of unsweetened fresh milk while stirring continuously to mix the fresh milk with the corn juice.

    Finally, add 200g of condensed milk and stir well, simmer on the stove over low heat for another 5 minutes, and your corn milk is ready!

• Choose sticky corn (bắp nếp) that has bright green husk, and the corn silk is not dry or wilted.
• The corn cob must still be fresh and not dry or wilted for the kernels to be sticky and fragrant.
• The corn kernels should be white with a slight yellow tint, evenly sized, and without unusual colors. When you press the kernels with your finger, if they don’t release too much water, the corn will be deliciously sticky.
• Do not choose corn with dry husks or opaque white color as such ears are often too old or are dried, wilted corn.

How to make Boiled Corn Milk using a slow juicer

  • Boil the corn

    First, peel the husk and silk from 4 American corn ears and 1 sticky corn ear. Keep the husk and silk to boil with the corn to extract sweet water.

    Gather the husks together and put them in the pot along with the corn silk, then add the 4 ears of corn and about 1 – 1.5 liters of water to just cover half of the corn in the pot.

    Add 1/2 teaspoon of salt to the pot and boil for about 20 – 25 minutes until the corn is cooked, then remove the corn from the pot and let it cool, keeping the boiling water to juice with the corn kernels.

  • Remove the corn kernels

    When the corn has cooled, use your hands to remove the kernels from 4 ears of corn; the corn is boiled, so it will be easy to remove the intact kernels.

  • Make corn milk

    Add a little water to the corn cooking water so that the total of the cooking water and the added water is 2 liters.

    Put the corn kernels and the cooking water into the slow juicer and juice. The machine will automatically filter out the corn residue, so there is no need to strain it again.

    Pour the extracted corn water into a pot and stir evenly over low heat. Make sure to stir continuously to avoid sticking to the bottom.

    When the corn water starts to boil gently, add 80g of sugar, then add 100g of condensed milk. You should add the condensed milk while stirring continuously to combine it well.

    When the corn milk boils vigorously, turn off the heat. Let the corn milk cool to about 70 degrees Celsius, then add the unsweetened fresh milk and stir well once more to finish!
