How to choose fresh and delicious red dragon fruit
- Fresh and delicious red dragon fruit will have a round and large shape, shiny skin, and a deep, even red color.
- Choose red dragon fruits that have green, bright stems and ears; when gently bent, they should be resilient as these fruits are still fresh and recently harvested, so they won’t be overripe.
- Avoid fruits with bruised or damaged skin, that feel soft to the touch with no elasticity, or those with dry stems, as these fruits are usually older and not fresh anymore.

How to make Dragon Fruit Milk Tea

Steep the tea
Put 30g of jasmine green tea and 70g of black tea into a cloth bag, tie it tightly, and place the tea bag into a teapot (if available) or a large pot.
Boil 2.3 liters of water and pour it into the pot to steep the tea, then cover and let it steep for 20 minutes. After 20 minutes, remove the tea bag and squeeze it dry to get the concentrated tea for making milk tea.

Make the milk tea
Add 400g of creamer powder to the steeped tea, then add 320g of white granulated sugar and use a whisk to mix until the creamer powder and sugar are completely dissolved.
Once the sugar and creamer powder are dissolved, continue to add 300g of condensed milk and 1/2 teaspoon of salt into the tea and stir until dissolved.
Also add 0.7kg of ice that has been prepared into the milk tea, then cover it to cool the milk tea quickly while retaining the tea’s aroma.
After adding the ice for about 10 minutes, the milk tea will have cooled down; pour the milk tea into bottles or small jars to store in the refrigerator and let it steep for 2 hours.
Tip: Adding a little salt to the milk tea will help enhance the sweetness of the milk tea. -
Making dragon fruit puree
Wash the dragon fruit, peel it, put the dragon fruit into the blender and blend for about 3 minutes to obtain the dragon fruit puree.

Make red dragon fruit jelly
Take a bowl and mix 200g of white granulated sugar with 1 packet of agar powder.
Pour 1 liter of water into a pot and bring it to a boil, when the water boils, turn off the heat to let it cool slightly, then add the sugar and agar mixture, stirring continuously while gradually adding the powder to the water to prevent clumping.
After about 3 – 5 minutes, the powder and water should be well mixed and no longer grainy, then turn the heat back on to medium and continue boiling once more. Let the mixture boil for about 5 minutes until the agar powder is completely cooked, then turn off the heat.
Measure 60ml of red dragon fruit juice and add it to the jelly mixture to create color. While adding the red dragon fruit juice, use a whisk to stir continuously.
Pour the cooked jelly into a heart-shaped mold (if available) or any mold you like. Wait for the jelly to cool, then place it in the refrigerator to chill for about 1 – 2 hours until the jelly sets.

Making red dragon fruit milk tea
Measure 70ml of the remaining dragon fruit juice and put it in a blender. Then add 170ml of milk tea and blend the dragon fruit juice and milk tea together for 1 – 2 minutes to get red dragon fruit milk tea.

Completion
Use a spoon to scoop out the jelly that has set into a bowl or plate.
Prepare a glass, add ice to the glass, pour the red dragon fruit milk tea into the glass. Add 6 – 7 pieces of red dragon fruit jelly on top to finish.
