  • Red kidney beans are larger and longer than regular red beans. They have a shape resembling a kidney, with a small white spot in the middle, unlike regular red beans which have small round seeds and black spots on the belly.
  • Choose beans with a beautiful, shiny red skin, evenly sized, and ensure they are not moldy, damp, or mixed with shriveled beans.
  • Avoid purchasing large red beans as they tend to be bitter and do not contain as many nutrients as smaller red beans.

How to make Red Bean Yogurt

  • Wash and soak the red beans

    Wash the red beans, rinse them clean, then soak them in water for 7 – 8 hours to soften. After that, rinse them again with water and let them drain.

  • Cooking the red bean mixture

    Dissolve 4 teaspoons of tapioca flour in 50ml of water, then stir well until the flour is completely dissolved.

    Place a pot on the stove, add the previously soaked red beans along with 1.5 liters of water to the pot, and simmer the beans for 45 minutes over medium heat.

    Next, add 200g of sugar to the pot, stir well, then cover and continue to simmer for another 15 minutes. After that, slowly pour in the tapioca flour mixture, stirring continuously as you pour. Finally, cook for another 2 to 3 minutes until the liquid in the pot thickens slightly.

    Put in the blender: 100ml sweetened yogurt, 20gr cream powder, 10ml heavy cream, a pinch of salt, 20ml sugar syrup, 5ml lemon juice, 200gr ice cubes.

    Next, blend the mixture for about 1 – 2 minutes until completely smooth.
