How to choose good soybean seeds

  • You should choose soybean seeds that have a bright yellow color, a shiny surface, and are plump.
  • Additionally, select seeds that are evenly sized; when you press them with your nail, they should feel firm and not easily crack or crumble.
  • Avoid seeds that are spoiled, have wrinkled surfaces, are infested with pests, or have dark spots on the belly.

How to choose good, plump peanuts

  • Choose peanuts that have a bright brown color, are firm and plump, with a smooth surface.
  • Prioritize choosing peanuts that are uniformly sized, balanced, and do not have too many shriveled or damaged seeds.
  • Avoid peanuts that have sprouted or developed mold, have wrinkled skins, feel too soft to the touch, or emit an unpleasant odor.

Where to buy mint syrup?

  • You can find mint syrup at grocery stores, traditional markets, supermarkets, or specialty beverage shops.

How to Make Mint Soy Milk

  • Soak Soybeans and Peanuts

    Wash the soybeans and peanuts you bought thoroughly, then soak them in water overnight or for at least 12 – 14 hours.

    After soaking, rinse them again and place them in a basket to drain, mixing the soybeans and peanuts together evenly.

    Put the soaked soybeans and peanuts into a grinding bowl, add about 3 liters of water, and blend this mixture until smooth. After grinding, use a cloth bag to strain out the residue.

    Next, use your hands to squeeze the residue as dry as possible to obtain the maximum amount of liquid, then add about 1 more liter of water and continue to squeeze vigorously.

  • Prepare and filter pandan leaf water

    With 150g of pandan leaves, wash them thoroughly, then cut them into pieces and put them into a mortar, add 200ml of water and blend the pandan leaves until smooth.

    Next, filter the blended pandan leaves through a sieve, using a spoon to press down firmly to extract the juice and discard the residue.

  • Cook pandan leaf mint soy milk

    Pour the soybean mixture water into a pot, stir well, adjust to low heat, and cook for about 30 minutes.

    After 30 minutes, slowly add 200g of condensed milk, continue stirring until the condensed milk is completely dissolved, then add spoonfuls of pandan leaf juice, tasting the soy milk as you go.

    When the milk turns light green and has a sweet taste to your liking, stop adding pandan leaf juice!

    Finally, add 200g of rock sugar to the pot, stirring well until the sugar is completely dissolved. At this point, add 2 tablespoons of mint syrup and stir again to finish.

    Tip: If you use fresh mint leaves, you should blend the mint leaves with the pandan leaves or add them to the pot to cook at this step! However, if you blend the pandan leaves with the mint leaves, the mint aroma will be more pronounced and stronger.
