How to choose ingredients
How to choose fresh and delicious pork ribs:
- When choosing ribs, you should look at their color to determine their freshness. Usually, fresh spare ribs have a light pink color and no sour smell.
- You should choose ribs with small and flat bones. This type of rib has more meat and less bone compared to larger, round ribs.
- However, you should also avoid choosing ribs that are too small because if the rib is small, it is certainly taken from a small pig, which will not taste good.
How to choose good green peas:
- For the best nutritional source, you should choose fresh green peas instead of dried or frozen types.
- You should choose immature pods that are light green, shiny and crispy. For fresh green peas that have not been shelled, choose peas and stems that are bright green, soft, with seeds that are neither too large nor too small, just right for eating.
- Do not choose peas with bulging seeds, limit buying frozen or dried peas because the nutritional content may be lost during processing or freezing.
How to choose fresh and delicious carrots
- To choose good carrots, you should select those that are not too small or too large, have a straight and elongated shape, smooth skin, slightly firm, and feel solid in hand.
- Choose carrots that have a deep orange color, with fresh green tops tightly attached to the roots.
- Avoid choosing overly large carrots, with big and thick leaves, branches, and roots because these are old carrots, and their cores are thick, which will have a lot of fibers that do not taste good and also lack nutrients.
How to make Pea Stew Ribs
-
Prepare the ribs
First, when you buy the ribs, if they haven’t been cut yet, use a knife to cut the ribs into bite-sized pieces. Next, wash the meat with clean water to remove any remaining dirt.
Then, put a pot of water on the stove to boil and blanch the ribs for 3 minutes. Finally, remove them to drain.
Tip to eliminate the smell of pork:
To remove the smell of the meat, when blanching, add a crushed onion to the pot of water; the onion will help eliminate the odor very well. Additionally, you can also add a bit of white wine, which will help clean the smell present in the meat.
-
Prepare the other ingredients
The peas should be washed clean, then soak them in a bowl of clean water to loosen the outer skin. After removing all the skins, drain the peas.
Next, wash the carrots and peel them, then cut them into flower shapes or into bite-sized pieces according to your preference.
Take 3 shallots and 3 garlic cloves that you have prepared, peel and finely chop them.

Making Pea Soup Ribs
Place a pot on the stove, add 1 tablespoon of cooking oil and wait for the oil to heat up. Then, add minced garlic and onion into the pot and sauté until fragrant. Next, add 2 tablespoons of tomato paste and stir well.
Next, add the ribs, season with 1 teaspoon of salt and 2 tablespoons of sugar. Continue to stir the ribs to absorb the seasoning over high heat. Once the meat has absorbed the seasoning, add half a bowl of water and continue to simmer over medium heat for 20 minutes.
After 20 minutes, add the peas and pour in 200ml of coconut water and continue to cook for another 20 minutes.
When the peas are soft, add the carrots and canned white beans and cook for about 5-7 minutes.
Finally, add 1 tablespoon of butter to make the broth richer and more fragrant.
