Oolong Tea 30 gr (or black tea) Cream Powder 50 gr (for making milk tea) Condensed Milk 150 gr Tapioca Flour 60 gr

How to choose good Oolong tea

  • Choose dry Oolong tea with a black-yellow color that has large, round, even pellets and is low in dust. When brewed, the tea should produce a deep yellow color, have a fragrant aroma, and a sweet, slightly astringent taste on the tip of the tongue, with a sweet aftertaste, indicating it is good tea.
  • Avoid buying tea packages that are damp, have a musty smell, and produce overly dark water when brewed, with a heavy scent and lacking the characteristic fresh aroma, as this may indicate the tea has not been well preserved and the quality will no longer be good.

  • Fat powder, also known as cream powder, is a type of powder that is highly smooth, cream-colored, and easily dissolves in water. There are two types: plant-based fat powder and animal-based fat powder.
  • People often use fat powder to replace milk and cream in drinks or baking because this powder provides richness and helps enhance the appealing aroma of dishes.
  • You can find fat powder at supermarkets, stores selling baking ingredients, mixing ingredients,… or order through e-commerce sites and reputable online websites.

How to Make Milk Tea Ice Cream

  • Make the tea

    You put a pot on the stove to boil 500ml of water. Next, you add 30gr of Oolong tea into the pot, cover it, and steep the tea for 20 minutes.

    Then you use a strainer to filter out the tea leaves to keep the tea liquid.

  • Make the milk tea mixture

    When the tea is still warm, you gradually add condensed milk and powdered cream into the tea and stir until the milk and powdered cream are completely dissolved.

    Next, you add ice cubes to the mixture and stir until the ice melts. Then you continue to add tapioca flour, stirring well to dissolve the tapioca flour.

    You turn on the stove and cook the mixture over medium heat, stirring continuously until the tapioca flour expands and the mixture thickens. When the mixture boils for about 5 minutes, you turn off the heat.

    You continue to stir vigorously with a whisk to let the mixture cool down a bit, then pour it into the ice cream mold.

  • Pour into molds

    After pouring the mixture into the ice cream molds, you should place the molds in the freezer refrigerator. After about 8 hours, the ice cream will be solid and ready to enjoy.

    Tip:
    • To easily remove the ice cream stick from the mold, you can soak the mold in warm water for about a minute, or rinse the outside of the mold with water and gently pull to see if the ice cream has released from the mold.
    • Before pouring the mixture into the ice cream mold, you should chill the mold in the freezer beforehand. This method will make it easier to remove the ice cream from the mold.

    The milk tea ice cream has a light tea aroma, blending with the sweet and creamy taste from condensed milk and cream powder. The cream is thick and smooth; biting into it, you will immediately feel the coolness on your tongue.
