  • Choose onions that are round, with long roots indicating freshness. Avoid those with unusual shapes or missing roots, as they will not taste good.
  • Good onions have thin, shiny skins, a beautiful yellow color, even coloring, and no dark spots. When touched, they feel smooth and firm.
  • Avoid buying sprouted onions, which have both hard and soft spots and uneven coloring, as these are not fresh and may taste bitter.

  • Prepare the ingredients

    First, peel the onions, cut off the root ends, and use a knife to cut the onions in half, then slice them thinly.

    For the 3 chili peppers, remove the stems by hand.

  • Soak the onions in salt

    Add the prepared onions to a bowl with 300ml of filtered water and 1 tablespoon of salt, then mix well and soak for about 5 minutes.

    After 5 minutes, drain the water from the onions and add about 9 – 10 small ice cubes, soaking for another 5 minutes before draining the water again.

    Tip: Soaking the onions in salt and ice will help the onions become whiter and crunchier.

    Add 250ml of vinegar into a bowl along with 1/2 tablespoon of salt and 5 tablespoons of sugar, then mix well.

    Tip: To keep the pickled onions longer, you can boil the pickling water and let it cool.

    Put the onions into a plastic jar, gently press down with your hand to push the onions to the bottom of the jar, then place the chili on top.

    After that, pour the pickling water into the jar, close the lid, leave it outside for about 1 day, then put it in the refrigerator to preserve it.
