Preparing the pork
Wash the pork, cut it into large pieces. Then, boil about 1.5 liters of water with lemongrass, ginger, and salt along with 1 tablespoon of fish sauce.
When the water boils for about 5 minutes, add the pork to boil until cooked. When the pork is just cooked, turn off the heat because overcooking will lose its sweetness, and remove the pork to a plate. Wait for the pork to cool slightly, then shred it.

Making dried pork
Place a pan on the stove, add about 200 ml of cooking oil, wait for the oil to heat slightly, then add sliced shallots to fry until fragrant. When the shallots are golden and crispy, remove them to a bowl. Now add the shredded pork into the pan to fry (divide into 3 batches). Remember to use chopsticks to stir the pork until it turns golden and flaky, then transfer the pork to a plate lined with paper towels.
Next, add sugar and water to the pan, place it on the stove to dissolve the sugar over low heat, then add fish sauce and continue cooking until the fish sauce thickens slightly (about 7 minutes). Finally, add the fried pork along with 1/2 teaspoon of pepper, and use chopsticks to mix well so that the fish sauce absorbs into the meat. Stir until the fish sauce dries up, then turn off the heat.
