  • Fresh and delicious carrots are of moderate size, elongated and tapered towards the end, with smooth skin, firm to the touch, and slightly hard.
  • Choose carrots that are bright orange in color, with fresh green tops firmly attached to the root.
  • Avoid carrots with wilted tops or any signs of bruising.
  • Do not select overly large carrots that have thick tops or shoulders, as these are likely older, with more fibers and fewer nutrients.

  • Choose shrimp that have a firm and transparent shell, with a sea smell instead of a fishy smell of seafood.
  • Pay attention to the shrimp’s tail; if the tail is curled together, it is fresh shrimp; conversely, if the tail is spread out, these may be shrimp that have been injected with chemicals or water to make them swell.
  • When you pick up the shrimp, if you see the shrimp’s body bending, and when you press lightly, a slimy substance comes out, that means the shrimp has died or has been iced for a long time, and is no longer fresh.

  • You should choose mushrooms that are long, large, and firm; these mushrooms will be sweeter than smaller ones.
  • Mushrooms that have been harvested for a long time and stored at cold temperatures often have blackened or bruised caps.
  • You should touch the mushrooms; if they feel slimy, you should not buy them.

How to make Shrimp and oyster mushroom soup

  • Prepare the shrimp

    Clean the shrimp you bought, peel the shell, and remove the dark vein on the shrimp’s back.

    Tip to quickly remove the dark vein: Use a toothpick or a sharp stick, count from the head of the shrimp down to the second segment, then press it in, and skillfully pull the shrimp vein out; it’s quick and clean.

    Wash the carrots, peel them, and cut into strips. Clean the oyster mushrooms, and cut them in half lengthwise.

    Only take the green part of the scallions, and cut them into small rounds. Chop the cilantro.

    Dissolve 1 tablespoon of tapioca starch in half a small cup of water, stirring continuously until the starch is completely dissolved in the water.

    Crack 1 chicken egg into a bowl and whisk it until well mixed.

  • Cooking the soup

    Place a pot on the stove and add 2 tablespoons of cooking oil, heating it up. When the oil is hot, add the green onions and sauté until fragrant. Next, add the oyster mushrooms and stir-fry for 3 – 5 minutes until the mushrooms are cooked.

    Pour in 500ml chicken broth (which is the water used to boil the chicken) and bring to a boil. When the water boils, add the carrots and cook for 5 – 7 minutes until the carrots are tender.

    Continue to add the shrimp and cook for 2 – 3 minutes until the shrimp turns red, indicating it is cooked. Add 1/2 tablespoon of seasoning and 1 teaspoon of salt. Adjust the seasoning to taste.

    Lower the heat and slowly add the cornstarch water to the pot while stirring continuously.

    Then gradually add the eggs, stirring well to create egg strands in the soup.

    Continue stirring until the soup thickens, then turn off the heat. Ladle the soup into bowls and sprinkle ground pepper and cilantro on top.
