Prepare the shrimp
Clean the shrimp you bought, peel the shell, and remove the dark vein on the shrimp’s back.

Prepare other ingredients
Wash the carrots, peel them, and cut into strips. Clean the oyster mushrooms, and cut them in half lengthwise.
Only take the green part of the scallions, and cut them into small rounds. Chop the cilantro.
Dissolve 1 tablespoon of tapioca starch in half a small cup of water, stirring continuously until the starch is completely dissolved in the water.
Crack 1 chicken egg into a bowl and whisk it until well mixed.

Cooking the soup
Place a pot on the stove and add 2 tablespoons of cooking oil, heating it up. When the oil is hot, add the green onions and sauté until fragrant. Next, add the oyster mushrooms and stir-fry for 3 – 5 minutes until the mushrooms are cooked.
Pour in 500ml chicken broth (which is the water used to boil the chicken) and bring to a boil. When the water boils, add the carrots and cook for 5 – 7 minutes until the carrots are tender.
Continue to add the shrimp and cook for 2 – 3 minutes until the shrimp turns red, indicating it is cooked. Add 1/2 tablespoon of seasoning and 1 teaspoon of salt. Adjust the seasoning to taste.
Lower the heat and slowly add the cornstarch water to the pot while stirring continuously.
Then gradually add the eggs, stirring well to create egg strands in the soup.
Continue stirring until the soup thickens, then turn off the heat. Ladle the soup into bowls and sprinkle ground pepper and cilantro on top.
