Lobster porridge is a dish that is both delicious and nutritious. With a rich, appealing flavor, the grains of porridge expand along with the sweet, firm lobster meat that will captivate you the first time you taste it. Ingredients for Lobster Porridge For 3 people

Lobster 800 gr (about 1 piece) Rice 200 gr Garlic 30 gr Shallots 70 gr Cilantro a little Green onions 3 stalks Fish sauce 1 teaspoon Common seasoning a little (Seasoning/ Salt/ Sugar/ Pepper)

How to choose fresh and delicious lobster

  • You should choose lobsters that are still alive and healthy, with a hard, shiny outer shell and a clear blue color.
  • Lobsters with joints between the head and body tightly connected are freshly dead, and their meat is still fresh and tasty.
  • Avoid choosing lobsters with thin and fragile claws and legs that break easily.
  • When touching lobsters that are slimy or have a foul smell coming up, you should not choose them as they are lobsters that have been dead for a long time and should not be bought.

How to prepare Lobster Porridge

  • Prepare the lobster

    When you buy the lobster, you should use a small brush to clean the outer shell and rinse it with water 2 – 3 times to ensure the lobster is clean and free of dirt.

    After the lobster is cleaned, you can use the pointed end of a knife to pierce the joint between the head and body of the lobster. At this point, the juices will flow out, and you can use a bowl to catch it, then use scissors to cut off the lobster’s head.

    Tip: The lobster juice added to the porridge will be very sweet, so don’t throw it away!

    The shrimp shells without meat will be cut separately and cooked with the porridge to make the broth sweeter.

    For the head, you will use scissors to cut the shell in half, and then use a knife to chop the shrimp head in half along the cut direction. Similarly, for the body, use scissors to cut it in half and chop along the cut line with a knife.

  • Roasting and cooking rice

    Wash the rice thoroughly and let it drain. Then, put the rice in a pan and roast it until it turns slightly yellow.

    Place a pot on the stove, add the roasted rice and 3 liters of water to boil. You can adjust the amount of water according to your preference. If you like it thick, you should reduce the water. Conversely, if you want it thin, you can add more water.

    Tip: Cooking porridge with roasted rice will make the dish fragrant and less likely to be overwhelming.

  • Blend the spices

    Add the peeled garlic, shallots, and green onion tips into the mortar and blend until smooth.

  • Sauté the lobster

    Place a pan on the stove, add 2 tablespoons of cooking oil, and add the blended spice mixture to sauté until golden.

    Next, add the pre-processed lobster and stir constantly until the lobster is firm. You should also season the pan with 1 tablespoon of sugar, 1 tablespoon of seasoning powder, and 1/3 tablespoon of salt, and stir well for the lobster to absorb the flavors.

    Tip: Sautéing the lobster first will help firm it up, absorb the flavors, and eliminate the fishy smell.

  • Complete the porridge

    Shrimp, after being sautéed with seasonings, should be removed from heat. When you see the rice has expanded, add the shrimp and a bowl of shrimp blood into the pot. Season the porridge with 1 teaspoon of salt and 1 teaspoon of seasoning powder.

    Continue to cook the porridge for another 10 minutes over medium heat to ensure the shrimp is cooked evenly.

    To enhance the rich flavor of the dish, after the porridge is smooth and the shrimp is cooked, add 1 teaspoon of fish sauce and turn off the heat.

    Note: Stir frequently to prevent the porridge from sticking to the bottom of the pot and burning.

    Serve the porridge in a bowl, garnish with a little cilantro, green onion, pepper, and enjoy. Lobster porridge is a dish that provides a lot of nutrition, is easy to make, and cooks very quickly, making it suitable for everyone, especially children and the elderly.
