How to Prepare Shrimp and Straw Mushroom Porridge

  • Preparing Ingredients

    Shrimp bought should be peeled clean, removing the shrimp vein, depending on your preference, you can also remove the shrimp head.

    Straw mushrooms should be soaked in diluted salt water for about 15 – 20 minutes, gently washed to remove all dirt, then drained. For larger mushroom heads, you can use a knife to cut them in half.

    Tip: Do not soak straw mushrooms in water for too long to avoid affecting their natural sweetness.

    Rice should be rinsed clean and placed in a bowl separately while waiting to be cooked.

    Tip: If you have time, you can soak the rice in clean water for about 30 minutes before cooking, which helps the porridge grains become tastier after cooking.

    Place a pot on the stove, add 2 tablespoons of cooking oil, and when the oil is hot, add 2 crushed garlic cloves, stirring evenly over medium heat.

    Put the washed rice into the pot, add enough water to cover about half of the pot, then bring to a boil over high heat. When the water boils, reduce the heat, cover, and continue cooking until the rice grains expand.

    Tip:

    • You should check the thickness of the porridge by stirring frequently; if it becomes thick, add more water.
    • Use a ladle to stir regularly to prevent the porridge from burning at the bottom of the pot.

    When you see the porridge grains burst evenly, add all the sautéed shrimp and straw mushrooms, mix well, and continue to cook for about 5 minutes until the mushrooms are fully cooked.

    Add 1 teaspoon of sugar, 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder to the pot, stirring well to dissolve the seasonings.

    Finally, add 1 tablespoon of finely chopped green onions, 1 tablespoon of fish sauce, and 1 tablespoon of fried onions, adjust the seasoning to taste, and mix well before turning off the stove.
