How to choose fresh and delicious ingredients

How to choose delicious carrots:

  • Fresh and delicious carrots will have a characteristic deep orange color, bright skin. The skin is smooth, not cracked, firm to the touch. The green top is still fresh, not damaged or wilted.
  • You should choose long, medium-sized carrots that are not too large and have few eyes on the body.
  • Avoid buying carrots with rotten tops and crooked bodies. These are old carrots that are difficult to process.
  • Do not buy carrots that are wormy or cracked, or have a strange smell.

How to choose fresh and delicious chayote:

  • Delicious chayote is made up of young fruits, not old. For smooth chayote, young fruits usually have a glossy skin. For spiny chayote, the spines are light green and not sharp. To know how young the fruit really is, you should press on it.     Tofu: Cut into pieces about the size of a finger. Then divide into 2 parts: 1 part to cook with the vegetables, 1 part to fry.

    Vegetarian sausage and mushroom sausage: Slice about 1/3 of a finger thick and arrange on a plate.

    Rice paddy herb, lemongrass: Wash thoroughly, then crush.

  • Simmer the vegetables

    Place a pot on the stove, add the cut vegetables into the pot, and add 3 liters of water. Cover and boil until the water boils, then reduce the heat and simmer for about 15 – 20 minutes until the vegetables are soft and sweet.

  • Frying tofu and vegetarian sausage

    Place a pan on the stove, add about 4 tablespoons of cooking oil to the pot. Heat the oil over medium heat, then add the tofu, frying until both sides are golden and crispy.

    Similarly for the vegetarian sausage and mushroom sausage, add oil to the pan (using the oil left from frying the tofu), keep the heat medium, wait for the oil to heat up, then add the vegetarian sausage and fry until golden over medium heat for about 5 minutes.

    Next, add the crushed lemongrass into the pot of simmering vegetables.

    Add 300ml of coconut water and 1 tablespoon of rock sugar, stirring well until the sugar dissolves. Then, pour the coconut water into the pot of simmering vegetables.

    Season with 3 teaspoons of monosodium glutamate and 3 teaspoons of salt to taste. After that, add 3 tablespoons of mashed fermented tofu and 3 tablespoons of fermented soybean sauce into the pot and stir well.

    Finally, add the crushed Vietnamese balm and fresh tofu into the broth. Adjust the seasoning to taste and cook for about 5 more minutes before turning off the heat.

  • Additionally, you should observe the roots and the stem. Fresh mushrooms typically have roots and stems that are not shriveled, relatively round, and plump.
