How to make vegetarian fermented soybeans from tofu

  • Prepare the ingredients

    Take the solid part of the fermented tofu, discarding all the liquid.

    Wash the lemongrass and then finely chop it.

  • Blend the fermented soybeans

    Put 500g of fermented soybean paste into the blender, break the soft tofu into small pieces and add it to the machine, add the chopped lemongrass, 2 tablespoons of seasoning, 1 tablespoon of sugar, 1 teaspoon of salt, and 10 pieces of fermented tofu with chili into the machine.

    Blend the mixture at medium speed until it’s well mixed. If the machine is too heavy, turn it off and use chopsticks to stir. Then turn up to high speed to crush the ingredients.

    Tip: Do not add water to the mixture, as it can spoil easily. Make sure to add the ingredients in the order listed for easier blending.

  • Stir-fry the fermented soybeans

    Place a pan on the stove, add 1/2 teaspoon of cooking oil, turn the heat to low, and wait for the oil to heat up before adding the fermented soybean mixture to the pan.

    Cook for about 5 – 7 minutes until the mixture is cooked through, remember to stir constantly to prevent burning!

    • Cooking the fermented soybeans helps preserve them longer and prevents mold. Do not add any additional seasonings while cooking.
    • Only cook until done, do not cook for too long, as the mixture will become thick and difficult to dip.

    The soybeans you bought should be rinsed clean, removing any spoiled beans, and then soaked in water for about 8 hours or overnight.

    After the soybeans have swollen from soaking, put them in a pot with 2 liters of water and cook for about 6 hours until the soybeans are soft, then turn off the heat and remove the soybeans to cool.
