Goat ribs 1 kg Traditional Chinese medicine 1 package Red dates 20 gr Longan 15 gr Rehmannia 15 gr Cinnamon/ star anise/ cardamom 10 gr Water 2 liters White wine 100 ml Mugwort 1 bunch Ginger 1 piece Ginger powder 2 tablespoons Common spices a little (Seasoning powder/sugar/salt)

  • When choosing goat ribs, you should select pieces that are bright red, small and flat, with a thin layer of light brown skin.
  • For fresh ribs, when gently pressed, they should be elastic, with soft and smooth meat, and have the strong characteristic smell of goat meat.
  • If you choose goat ribs for soup, you should select parts that have both lean meat and fat to create a more fragrant and richer flavor.
  • You should avoid buying pieces of ribs that have a strange odor, have dark purple meat, and feel slightly slimy to the touch, as these may be ribs that have been stored for too long and are no longer fresh.

How to choose quality longan

  • Quality longan should have a light yellow color, evenly colored, round, with uniform flesh, and feel dry to the touch, not sticky to each other.
  • You should not choose longan that is dark in color, dark red, burned, or has reddish tips, as these are very harmful to health.
  • If they feel very soft, sticky, and don’t hold their shape when touched, you should not buy them as they may be low-quality longan.
  • To purchase quality longan, you should buy from reputable places with clear origins, helping to avoid mistakenly buying low-quality types.

How to prepare Goat Ribs stewed with herbal medicine and wormwood

  • Prepare goat ribs

    First, chop the goat ribs into large pieces about 5cm and put them in a basin along with 2 spoons of ginger powder, 100ml of white wine, mix well and marinate for about 15 minutes. Then, wash the goat ribs under running water until clean.

    Next, boil 1 pot of water with crushed fresh ginger, then add the goat ribs and blanch for 5 minutes to eliminate the odor. After blanching, remove the ribs and wash them clean with water, then let them drain.

  • Prepare other ingredients

    Herbal medicine, red dates, longan, dried licorice, cinnamon, star anise, cardamom after buying, you wash them thoroughly with water. For the mugwort, pick the shoots and young leaves, then wash them and let them dry.

    Next, peel 5g of ginger and slice it into strips.

  • Stew goat ribs with herbal medicine

    First, place a pot on the stove, wait for the pot to heat up, then add all the herbal medicine, cinnamon, dried licorice, and longan to roast evenly. When the ingredients are fragrant, pour in 2 liters of water and the prepared goat meat, then boil for about 20 minutes. If you see foam rising on the broth, skim it off.

    Next, add 2 tablespoons of seasoning powder, 2 tablespoons of sugar, and 1 tablespoon of salt to the pot of stewing goat ribs.

    After stewing on medium heat for about 60 minutes, when the ribs are tender and the liquid reduces to about 1/2, lower the heat and cook for about 10 – 15 minutes, then turn off the heat.
