How to Make Almond Chocolate Ice Cream

  • Make the chocolate sauce

    First, place a pan on the stove over low heat, add 60ml of unsweetened fresh milk, 60ml of whipping cream, and 150gr of dark chocolate, then use a flat whisk to stir for about 5 minutes.

    Mix 3 tablespoons of cocoa powder with 30ml of unsweetened fresh milk in a small bowl, stirring well to avoid clumping.

    When the dark chocolate has completely melted, add the cocoa powder mixture to the pan and stir well.

    Next, add 3 tablespoons of sugar to the chocolate sauce and use a whisk to gently beat the mixture until the sugar dissolves and the sauce is smooth without lumps, then turn off the heat and let it cool to room temperature.

  • Mix the ice cream mixture

    Add 240ml of whipping cream to a large bowl and use an electric mixer to whip until the cream is fluffy and thick for about 5 minutes.

    Next, add the chocolate sauce and continue to beat for another 5 minutes. After that, add 60gr of almond nuts to the mixture and use a flat whisk to mix evenly.

  • Pour into mold and freeze

    Pour the ice cream mixture into a mold, use a flat whisk to spread it evenly, then sprinkle chocolate chips and 20g of almond crumbs on the surface. Cover tightly with plastic wrap and place in the refrigerator to freeze for 6 hours or overnight to enjoy.

    Use a special ice cream scoop to serve the ice cream into a cup and sprinkle some chocolate crumbs if desired to make the ice cream look more appealing. How to make Almond Chocolate Ice Cream from Cocoa Powder

  • Roasting Almonds

    First, spread the almonds evenly on a baking sheet or cutting board, then use a knife to chop them into thin slices or crumbs as desired. At the same time, preheat the oven to 350 degrees Celsius for 5 minutes.

    Place another sheet of parchment paper on the baking tray, pour the almond crumbs onto the tray, and spread them out into a thin layer for even roasting.

    Then, place the baking tray in the oven and roast at 350 degrees Celsius for 3 minutes to finish the almond part.

    Note: You should remove the almonds from the baking tray as quickly as possible while the parchment paper is still hot, then cool them at room temperature.

  • Whipping Fresh Cream

    Pour 240ml of heavy whipping cream into the bowl of the mixer and start whipping the fresh cream.

    First, turn the machine on from low speed and gradually increase to the highest setting over about 2 – 3 minutes. Maintain the highest setting for 1 minute, then pause the machine and use a spatula to check if your whipped cream has started to thicken.

    Continue to turn on the machine and whip the fresh cream at medium speed for about 3 – 5 minutes; when the cream is thick and you lift the machine, the cream should not drip down. This means you have succeeded.

    Note: You should start whipping from low speed and then increase to high speed, and do not whip the heavy whipping cream for too long as it may cause separation or not whip properly.

    Add 280ml of condensed milk to the whipped cream and mix until halfway, then add 125gr of cocoa powder. Use a flat whisk to mix until the three ingredients are blended smoothly, especially until no cocoa powder is visible.

    Next, add all the roasted almond crumbs and continue to mix until smooth and even.

  • Pouring into molds and freezing

    Pour the cream mixture into a large bowl or a specialized cake mold and then cover it tightly with plastic wrap. Place the bowl of cream in the refrigerator to freeze for about 6 hours or overnight is also fine.

What is cocoa powder?

  • Cocoa fruits are fermented for 2 – 9 days and then dried after harvesting. After that, the cocoa beans are roasted to bring out their fragrance and then ground into a fine powder.
  • Cocoa powder is a type of powder made from the residue of chocolate liquor – a dark brown mixture that includes fat, cocoa butter that melts when finely ground cocoa beans.
  • Natural cocoa powder has a light brown color, but if it has been processed (alkalized), the cocoa powder will have a darker brown color, ranging from reddish brown to nearly black.
  • Besides being used to make beverages, cocoa powder is also one of the familiar ingredients in cake recipes or various drinks.

How to distinguish pure cocoa powder from blended cocoa powder

  • The alkalization process significantly affects the color of cocoa powder. Regardless of the degree of alkalization, pure cocoa powder basically retains a dark, bright, and uniform color.
  • In contrast, due to blending, the color of blended cocoa powder is somewhat pale, with a reddish brown or light brown hue and speckled with white spots.
  • Pure cocoa powder, when consumed, will have a bitter, fatty, and slightly sour taste. In contrast, blended cocoa powder will taste sweet because it has been mixed with milk or sugar.
  • When dissolving pure cocoa powder, it will produce a slightly liquid mixture with a rich cocoa flavor, a strong, pleasant aroma that is very distinctive. Conversely, if the cocoa mixture is thick after mixing and has a faint cocoa aroma with strong scents of vanilla, milk, or sugar, then it is blended cocoa powder.
