Cashews 65 gr Cocoa butter 4 tablespoons Coconut oil 4 tablespoons Salt 1 teaspoon Coconut milk 240 ml Vanilla bean 1 teaspoon (vanilla bean) Vanilla extract 1 teaspoon Sugar 250 gr Water 60 ml

Coconut milk can be purchased in canned form available at TasteVN supermarkets nationwide or online at bachhoaxanh.com. Additionally, you can also make coconut milk at home.

How to make Cashew Coconut Milk Ice Cream

  • Blend cashew nuts

    Soak the cashew nuts overnight to soften.

    Next, add the soaked cashew nuts (including soaking water) into the blender and blend until smooth. Then, strain the mixture through a sieve for a fine texture.

    Note: The soaking water for the cashew nuts should not be too much, just enough to cover the nuts.

  • Making Ice Cream

    Place a pot on the stove, add 60ml of water, 250gr of sugar, and stir well over low heat until the sugar dissolves.

    Then, add 4 tablespoons of cocoa butter, 4 tablespoons of coconut oil, and 1 teaspoon of salt. Stir well until the mixture is combined.

    Add the blended cashew nuts, 240ml of coconut milk, and the cocoa butter mixture into a blender. Mix the ingredients for 1 – 2 minutes.

    Pour the mixture into a large bowl, add 1 teaspoon of vanilla extract, and 1 teaspoon of vanilla bean, then use a whisk to mix thoroughly.

    Pour the mixture into a mold, and place it in the freezer for about 4 – 6 hours or preferably overnight for the ice cream to freeze completely.

  • Grind the black sesame

    Add 50gr of roasted black sesame to the mortar, then use a pestle to grind until the sesame is finely ground.

    Add the ground black sesame, 180gr of cashew nuts, 150gr of sugar, and 600ml of fresh milk into the blender.

    Blend the mixture until smooth.

    Pour the ice cream mixture into a container and place it in the freezer for about 4 – 6 hours until the ice cream is completely frozen.

    Black sesame ice cream has a light gray color, with a strong black sesame flavor. However, you will still perceive a light creamy taste blended with a bit of nuttiness from the cashews. All of these flavors intertwined enhance the deliciousness of the ice cream.

How to choose good cashew nuts

You should choose cashew nuts that have plump, naturally round tails, bright yellow color, and are not chipped. Absolutely do not buy if you see nuts that show signs of darkening or mold.
