How to make Fried rib cartilage with fish sauce

  • Prepare the rib cartilage

    Wash the rib cartilage with diluted salt water. Then, rinse it again with cold water and let it drain.

    Chop the rib cartilage into pieces about the length of 2 finger joints.

    You place a pan on the stove, add 5 tablespoons of cooking oil to the pan and heat it over medium heat.

    Add to a bowl 3 tablespoons of water, 1.5 tablespoons of fish sauce, 1.5 tablespoons of sugar, 1 teaspoon of chili sauce, and stir the mixture well to dissolve the ingredients together.

  • Prepare and marinate the ribs

    Buy the ribs and cut them into bite-sized pieces, about 2 finger joints long. Wash the ribs with salt water, then rinse them again with clean water and let them drain.

    Put the cleaned ribs into a bowl and add 1 tablespoon of minced shallots, 1 tablespoon of minced ginger, 1/2 teaspoon of salt, 1 tablespoon of five-spice powder, 1/4 tablespoon of pepper, 2 tablespoons of vinegar, 2 tablespoons of white wine, 2 tablespoons of soy sauce, and 1 chicken egg.

    Use chopsticks to mix the spices and the ribs together thoroughly. Marinate the ribs for 15 minutes to allow them to absorb the spices.
