How to make Seaweed Rice Crackers with Roasted Sesame

  • Mix seaweed with rice

    Cut the seaweed into small pieces with scissors and add it to a bowl of rice. Next, add 2 tablespoons of roasted sesame, and use a spoon to mix well so that the rice, sesame, and seaweed are evenly combined.

  • Flatten and shape the rice

    Place 1 tablespoon of the mixed rice onto one side of a plastic wrap. Fold the plastic wrap in half, gently press the rice down with your hand, and use a rolling pin to roll it out evenly until the rice is very thin. Then, use a knife to cut off the excess edges to form a neat rectangle.

How to Choose Good Pork Floss

  • You should choose pork floss that has a light yellow color from cooked meat. Avoid buying pork floss that is dark yellow as it may contain artificial coloring or chemicals.
  • Real pork floss will be fluffy like cotton, with small strands that do not stick together. It should not be too chewy or too crumbly, and will dissolve in your mouth.
  • In contrast, fake pork floss made from cassava residue will become tougher the more you chew, and may not crumble easily; it will have large strands that stick together and are not fluffy.

How to make Seaweed Crispy Rice with Pork Floss

  • Making crispy rice

    Add 1 tablespoon of cooking oil to the pan, wait until the oil is hot, then add the rice, stirring to heat the rice evenly, then add 1/2 teaspoon of pepper, 1 tablespoon of seasoning, 1/3 teaspoon of monosodium glutamate, and 1/2 teaspoon of salt to the pan.

    Stir well for the spices to absorb into the rice, then reduce the heat to the lowest setting, press the rice evenly and tightly down onto the pan, wait about 7 – 10 minutes for the surface of the rice to turn golden, then flip it over.

    Press the rice tightly and continue frying for another 7 – 10 minutes until the rice is fried into a solid mass that does not fall apart.
