How to Choose Fresh, Delicious Oyster Mushrooms
- You can choose gray oyster mushrooms or white oyster mushrooms according to your preference. For stir-fried dishes, you should choose gray oyster mushrooms because they are crunchier, firmer, and sweeter.
- Choose oyster mushrooms with thick, firm, and sturdy stems, as they will be tastier and have a better aroma than those with small, wide stems.
- Choose mushrooms with a solid stem, large cap, slightly concave top, and thin gills under the cap.
- Prefer clusters of oyster mushrooms that are fresh and fragrant with a characteristic mushroom smell.
- Avoid buying mushrooms with torn caps, broken stems, hollowed out, or crushed and wilted mushrooms.

How to prepare stir-fried oyster mushrooms with lemongrass and chili

Prepare the ingredients
To clean the oyster mushrooms of all dirt, when you buy them, cut off the stems, soak them in diluted salt water for about 20 minutes, then rinse with clean water, squeeze out excess water, and let them drain.
You can leave them whole or tear the mushrooms into 2 – 3 bite-sized pieces for larger mushrooms.
Peel the garlic, crush it, and then use a knife to chop it finely. Wash the chili and chop it finely.
Wash the turmeric, peel it, and chop it finely. Remove the old roots from the lemongrass, wash it, and slice it thinly.

Stir-fry the mushrooms
Place a pan on the stove over medium heat, add 2 tablespoons of cooking oil, and when the oil is hot, add the lemongrass, garlic, and chili to fry until fragrant and golden.
Next, add the mushrooms and stir-fry over high heat, seasoning with 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of sugar, and 1/2 tablespoon of monosodium glutamate.
Continue to stir-fry for another 3 minutes over high heat until the mushrooms are cooked, taste and adjust the seasoning as needed, then turn off the heat and serve on a plate.
